Happy March!! I’m not sure if it is because February only has 28 days or if I’m just getting older, but time sure seems to fly by these days. When I was younger I couldn’t wait until the next month or year because I just wanted to grow up, but I’m really enjoying this current stage in my life and now I just want things to slow down!
It feels like just yesterday I was so sad that spring was over because I hadn’t gotten to make all my favorite spring recipes, and more importantly, summer was here and it was 110 degrees out! The seasons are kinda strange here in Arizona. I feel like we do get to experience all 4 seasons, but some for only a week or two, and unfortunately Spring is one of those seasons. So, I know that it isn’t Spring weather everywhere right now, but I gotta take advantage while I can!
Although, it is a little bit early, this is really a St. Patrick’s Day themed salad! Salad might not be the first thing that comes to your mind when you think of St. Patrick’s Day, but this really is the Greenest Chopped Salad you will ever see and it would go perfectly with a big pint of green beer ๐ at least I’m going to pretend it would!
Spring weather always makes me not only want to clean up and organize the house a bit, but also start eating a little lighter in preparation for the summer, and this salad is perfect for that. The spring mix makes this salad nice and light and the rest of the super green ingredients bulk it up and make it filling. You have some creaminess from the avocado and feta, a salty bite from the green olives, sweetness from the green apple, and crunchiness from the broccoli and pistachios. Every good salad needs some crunch!

Description
A delicious and healthy salad filled with all the green fruits and veggies!
Ingredients
- 6 cups chopped greens, your favorite kind
- 1 green apple, chopped
- 1 cup chopped cucumber
- 1 cup shelled edamame
- 1/2 cup thinly sliced green onion
- 1 avocado, diced
- 1 cup broccoli florets
- 1 cup green grapes, cut in half
- 1/2 cup pistachios, roughly chopped
Herb Dressing:
- 1/3 cup olive oil
- Juice of 1 lemon
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon maple syrup
- 2 tablespoons chopped fresh herbs, your favorite kind
- 1 small clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Place all dressing ingredients into a jar and whisk or shake until combined, set aside.
- Place chopped greens into a large bowl and top with the remaining chopped salad ingredients. Drizzle salad with desired amount of dressing and toss until combined. ย You could also just top each individual salad servings with desired amount of dressing.
Notes
This recipe makes enough salad for about 4 people, but you can make this salad as small or as big as you would like, just use however much of each ingredient as you would like.

Hi Izzy! When I first saw this picture, the thought just jumped into my head….this is totally St. Patrick’s Day food. I’m trying to detox a bit and give my tummy a break and need foods that are easy on the stomach. Plus, this pretty salad is quite easy on the eyes. May I give you a liite challenge in suggesting to you that it would be awesome if you could come up with a salad of the month with a different color of the salad wether veggies or fruit salad or a mix of the same color just like you did now everything greens in using the primary colors and a different salad dressing also.

I made this salad for St. Patrick’s day and it was a huge hit. I did steam the broccoli for a very short time which seems to make it even greener and less rubbery and likely to stick in one’s teeth! The pistachios add a delightful crunch… I liked it so much I think I am going to make it for Easter too! Thanks Izzy!
