Tahini Roasted Broccoli Recipe Ingredients
- Broccoli – You can buy a couple crowns of broccoli and cut them up yourself or you can buy pre-cut broccoli crowns at the grocery store. I prefer to use mostly florets for this recipe rather than using stems also. It’s totally up to you. Cauliflower could also be used, if desired.
- Tahini – There are many brands of tahini out there and some are more bitter than others. Use a brand you’re familiar with or give it a taste first to make sure it’s not too bitter. I used some homemade tahini that I had on hand.
- Other Sauce Ingredients – In addition to the tahini, the sauce is made with oil, tamari, nutritional yeast, lemon juice, cumin, paprika, garlic, salt, pepper, and a little water. It’s similar to the tahini sauce I use in my kale chip recipe. Feel free to add extra spices if you like.
How To Make Tahini Roasted Broccoli
- Preheat the oven to 425 degrees F. Wash your broccoli well and pat it dry with a clean kitchen towel. Cut the broccoli into small florets. You can use the broccoli stems for this recipe, but the tahini sauce coats the broccoli better when using just the florets. Add the broccoli to a large bowl.
- Make your tahini sauce: Add the tahini, oil, tamari, nutritional yeast, lemon juice, cumin, paprika, garlic powder, salt, and pepper to a medium-sized bowl. Mix the sauce together and then add in the water. Mix again until a creamy sauce has formed. Depending on your tahini brand, it may be thinner or thicker than some. If your tahini is thick, you may need more water; if it’s on the thinner side, you may only need 1-2 Tablespoons.
- Pour the tahini sauce over the broccoli florets and mix well. I usually use a spatula to start the mixing process, and then I use my hands to ensure the broccoli is completely coated with the sauce.
- Dump broccoli onto a large baking sheet and spread out into a single layer. Place in the oven and roast for about 20 minutes, flip broccoli with a spatula, and then roast for another 5-10 minutes, until the broccoli is fork tender and starting to get crispy.

- 4–6 cups small broccoli florets
- 1/4 cup tahini
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 tablespoon tamari, or soy sauce
- 1 tablespoon nutritional yeast
- 1 teaspoon paprika
- 1 teaspoon granulated garlic
- 1/4 teaspoon cumin
- 1/4 teaspoon salt, or more to taste
- 1/2 teaspoon black pepper
- 3 tablespoons room temperature water
