I feel like I need to apologize, but hopefully you all like baked oatmeal cups as much as we do! Â The flavor possibilities are endless, they’re so easy to make and they’re so great for a healthy make ahead breakfast!

Oatmeal cups have quickly become my favorite breakfast for a few reasons. Â They’re really easy to make, al you do is throw your ingredients into a bowl, mix and then bake. Â They’re easily adaptable, you can pretty much add any ingredients that you like for the main flavor base and then add in any boosts that you like, such as protein powder.
They’re obviously great for breakfast, but they make nice snacks too! Â We usually end up snacking on them all day and my (almost) 2 year old always wants more.
Feel free to adapt these Healthy Strawberry Banana Baked Oatmeal Cups anyway you like. Â You can easily just make a big pan of baked oatmeal instead of cups by baking the batter in a large pan instead of the muffin tin. Â Whatever way you make these I hope you enjoy!

Description
These Healthy Strawberry Banana Baked Oatmeal Cups are so easy to make and perfect for a make ahead breakfast you can enjoy all week!
Ingredients
- 4 cups old fashioned oats, gluten free certified if necessary
- 1/4 cup coconut sugar or brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon chia seeds
- 2 tablespoon flax
- 2 1/3 cup unsweetened almond milk
- 2 teaspoons vanilla extract
- 1/4 cup pure maple syrup
- 1 extra large banana or 2 small bananas, mashed
- 2 cups diced strawberries
Instructions
- Pre-heat oven to 375 degrees F. Add all dry ingredients to a large bowl and mix.
- Add all wet ingredients to the bowl and mix until completely combined.
- Spray a muffin tin with cooking spray and scoop oatmeal mixture in using a large ice cream scoop or a 1/4 measuring cup.
- Bake oatmeal cups until firm to the touch and cooked through, 20-25 mins.
Notes
Store oatmeal cups in an airtight container in the refrigerator for up to 5 days and in the freezer for up to 3 months.
