These delicious Spicy Potato Tacos with Black Beans are made with five easy ingredients from Trader Joe’s. They come together in just 15 minutes and are great for breakfast or dinner!
Happy Monday! I got some great feedback from my last Trader Joe’s Five-Ingredient post, so I decided to make them weekly! If you don’t have access to Trader Joe’s, I include a section on how you can make this recipe from scratch. I plan to return to my usual posting schedule of two new recipes per week, and every Monday will be a new Five-Ingredient Trader Joe’s recipe. Today, I have these Spicy Potato Tacos with Black Beans, which are so good!
This entire recipe was inspired by romesco sauce. I bought it last time I was at Trader Joe’s, and my husband and I have been putting it on everything. It’s spicy and smoky and I kept thinking about how delicious it would be with some roasted potatoes. I then started thinking about tacos, and that’s how these Spicy Potato Tacos with Black Beans were born 🙂
Spicy Potato Taco Ingredients
- Roasted Potatoes with Peppers and Onions – When I came up with this meal, I just kept in mind that I wanted to use some kind of crispy potato. I happened to find these Roasted Potatoes with Peppers and Onions and they worked so well! They’re flavored, crispy on the outside, and soft on the inside, and they even add some extra veggies. You can also use tater tots or dice up and roast your own potatoes.
- Cuban Style Black Beans – I love the extra flavor of the Cuban-style black beans. They have some green chile in them, too, which is nice. You can definitely use regular black or pinto beans if you like.
- Romesco Dip – Romesco is a dip, or sauce, made from tomatoes, red peppers, almonds, and spices. It’s smoky, a little spicy, and so delicious.
- Guacamole – I opted for pre-made guacamole because it already had some spices added, but a plain smashed avocado would be great, too.
- Corn Tortillas – I use corn tortillas for all of my taco recipes and I love to heat them over the gas burner flame. However, if you prefer flour tortillas, those work well, too.
How To Make Spicy Potato Tacos with Black Beans
This recipe is super easy to make without much prep at all! That’s one of the reasons I love the idea behind this Trader Joe’s Five-Ingredient Series; it’s totally OK to use a few pre-made ingredients to make dinnertime quick and easy!
- Start by heating a large pan over medium heat. I found that I didn’t even need to add oil because the potatoes were pre-roasted; I poured the package of potatoes into the pan and cooked until they were completely heated through and still crispy on the outside. It helps to cover the pan for a few minutes.
- Open your can of beans, drain, and rinse them. Rinsing them doesn’t take away all the flavor, but if you’re worried about it you can drain them and try to shake all the excess liquid out. Add the beans to the potatoes and cook until everything is heated through.
- I love to heat my corn tortillas by placing them over the open gas flame until each side is slightly charred.
- Assemble your tacos: spread each tortilla with a spoonful of guacamole and top with 1-2 spoonfuls of potato mixture. Top with romesco sauce and enjoy! I added a bit of cilantro because I had some in the garden and I can’t help but add a little green garnish sometimes 🙂

- I don’t have a recipe for romesco sauce, but if you google “romesco sauce recipe,” you find thousands of options! You can also use salsa if you like.
- For the guacamole, you can buy pre-made guacamole at most grocery stores. You could make your own with this easy recipe, or you can smash a plain avocado and season with a bit of salt.

Ingredients
- 1 (24 oz) bag Trader Joe’s roasted potatoes with peppers and onions
- 1 (15 oz) can Trader Joe’s cuban style black beans
- 1 container Trader Joe’s guacamole
- 1 container Trader Joe’s romesco sauce
- Corn tortillas
- Optional topping: fresh cilantro
Instructions
- Heat a large pan over medium heat. Add the bag of potatoes and cook until potatoes are heated through, it helped to cover the pan for a few minutes to really heat them up. I found that I didn’t need any additional oil but you could add some if you like.
- Drain and rinse the black beans and add them to the pan once the potatoes are completely cooked. Stir everything together and cook until heated through.
- Heat your corn tortillas up, either on an open flame burner or in a pan. Spread each tortilla with a spoonful of guacamole, top with 1-2 spoonfuls of the potato mixture and then top with romesco sauce. Add some fresh cilantro if desired and enjoy!
