- 2 (15 ounce) cans black eyed peas, drained and rinsed
- 1 medium red pepper, diced
- 1 medium green pepper, diced
- 1 large avocado, diced
- 1 cup cherry tomatoes, cut in half
- 1/4 cup chopped red onion
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
- Juice of 1/2 a large lime
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Add all ingredients to a large bowl and mix until combined. Serve by itself or with chips/crackers if desired.
