Description
These Scallion Soy Noodles are easy to make and so delicious! They are great for a quick lunch or dinner.
Ingredients

- 8 oz package Asian style noodles (Chinese noodles, stir fry noodles, ramen, soba, rice noodles, etc.)
- 2–3 tablespoons neutral flavored oil
- 2–3 bunches of scallions, or green onions (It depends on how many scallions you want in your noodles)
- 1–2 cloves garlic, minced
- 1/4 cup soy sauce, or tamari
- 2 teaspoons toasted sesame oil
- 2 teaspoons pure maple syrup
- 1 tablespoon toasted sesame seeds
- Chili Crisp, as much as desired
Instructions
- Start by cooking your noodles according to package directions. I cooked my noodles for about 5 minutes, drained them and then rinsed them under cold water for about 30 seconds. Set rinsed noodles aside until ready to use.
- Wash scallions and then cut the super green top parts off. Separate the tops and the whiter bottoms. Separately julienne both parts of the scallions and then cut them in half.
- Heat a large pan over medium heat and add your neutral flavored oil. Add in the whites of the scallions and stir around. Turn heat to low and cook scallions until browned, 12-15 minutes. Next, add in the scallion greens and the garlic. Stir together and cook for another 5 minutes or so.
- Add the cooked noodles into the pan with the scallions and then add in the soy sauce, toasted sesame oil, maple syrup. Let everything cook together until the sauce has cooked into the noodles, about 5 minutes. Season with salt, to taste.
- You can either stir in the chili crisp and toasted sesame seeds or you can top each individual bowl with them. Fresh scallions would be a great garnish also!
