The holiday season is finally upon us which means stuffing ourselves silly and then sneaking leftovers directly out of the refrigerator in the middle of the night. You do that too, right?! I have to admit that mashed potatoes are usually my go-to potato side for Thanksgiving and Christmas but sometimes I like to shake things up and throw in some roasted potatoes instead.
This year I’m really shaking things up and serving up these Purple Roasted Potatoes with Lemon, Dijon & Thyme Dressing! And I don’t think that anyone will miss the mashed potatoes with these beauties! I get really excited about pretty colored food so when I saw these purple baby potatoes at the store, I just had to buy them! And then of course I had to roast them because that is just what I do with potatoes.
As delicious as Thanksgiving food is, it is usually not the most colorful of food. So, this year, add some gorgeous color to your table by roasting up these purple potatoes!

- Total Time: 50 minutes

Ingredients
- 3 pounds baby purple potatoes, cut in half
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Lemon Dijon Thyme Dressing:
- 1/4 cup olive oil
- 1 tablespoon dijon mustard
- 2 tablespoons fresh lemon juice
- 2 teaspoons chopped fresh thyme
- 1 small clove garlic, minced (about 1 teaspoon)
- 1/4 teaspoon salt
- 1 pinch black pepper
Instructions
- Pre-heat the oven to 400 degrees Fahrenheit. Line a large sheet pan with parchment paper. Place sliced potatoes on the pan and toss with the olive oil, salt and pepper. Spread out potatoes into an even layer and roast until fork tender and browned, about 40 minutes.
- While potatoes are roasting, make the dressing: Add all dressing ingredients to a small bowl and whisk until combined.
- Each person can spoon desired amount of dressing over potatoes before eating.

Excellent use of purple potatoes. I would add even more garlic and I found we needed to cook them 7 more minutes to get them extra crispy. I added fresh parmesan at the end. So simple my daughter made them, but a nice change.

I wasnβt able to find 100% purple potatoes, so I got a bag of variety potatoes, that happened to include purple. For the Dijon, I used the brand Koops. Thyme from my herb garden. Incredibly satisfying.
