Happy Friday! I hope you all are as excited as I am about these new Quick and Easy, Budget Friendly, Vegetarian Meal Plans! Each Saturday morning I will send out the new meal plan that includes: 5 vegetarian dinner recipes that all take 30 minutes or less to prepare (sometimes I will add meals that may take a little bit longer but will provide tips on how to shorted that time) and a printable ingredient list that you can use to help with your shopping list. For each recipe I will also give suggestions on optional side dishes and ways to make the meal even more budget friendly!
Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family.

MONDAY
Coconut Red Thai Curry Noodles
Serving Suggestions: I can eat this meal all by itself or it would be great with some frozen egg rolls, dumplings or you could add some tofu or chickpeas to bulk up the noodles.
Budget Modifications: For the vegetables, you can get a package of frozen stir fry veggies or these days most grocery stores usually have pre-sliced fresh stir fry veggies in the produce section. Pre-sliced veggies are usually more expensive, but it can be economical when you want just a little bit of a few different kid of vegetables.
TUESDAY
Serving Suggestions: I like to serve my tacos with a side of chips and salsa/guacamole or a side salad. Also, feel free to add cheese if not making vegan!
Budget Modifications: This recipe is already very budget friendly!
WEDNESDAY
30 Minute Gnocchi Lasagna Bake
Serving Suggestions: This gnocchi lasagna bake is great with a side salad and/or some garlic bread or breadsticks. You could also do a big side of steamed or roasted veggies.
Budget Modifications: This recipe is already very budget friendly! Instead of using zucchini, you can use any kind of veggies you have on hand.
THURSDAY
Clean Out The Refrigerator Vegetable Stir Fry
Serving Suggestions: Serve over rice, quinoa or stir fry noodles. Also great with a side of frozen egg rolls or dumplings.
Budget Modifications: This is a great recipe to make towards the end of the week so you can use up any veggies you have in the refrigerator. You don’t have to use the veggies I used!
You can also buy a bottle of stir-fry sauce or teriyaki sauce instead of buying all the ingredients to make the stir fry sauce, if you don’t already have them on hand.
FRIDAY
French Bread Pizzas with Pesto and Broccoli
Serving Suggestions: I like to serve with a side salad.
Budget Modifications: This recipe only requires a few ingredients, they are all generic though, so if you’re watching your grocery budget, just make sure to buy the cheapest options of the ingredients listed.
