Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Sheet Pan Polenta Vegetable Bake
Serving Suggestions: This polenta bake is pretty filling just by itself, but can also be served with a side salad and/or garlic bread.
Budget Modifications: This recipe is pretty budget friendly to begin with but a couple bags of frozen veggies could be used instead of the fresh vegetables.
TUESDAY
Serving Suggestions: Serve tacos with a side or chips and dip or bean and rice.
Budget Modifications: If you don’t have all the fajita spices on hand, you can buy a packet of fajita seasoning at the grocery store and use that instead of buying whole bottles of all the spices.
WEDNESDAY
Sesame Ginger Noodles with Vegetables
Serving Suggestions: These noodles are great with a side of egg rolls or potstickers.
Budget Modifications: Use whatever vegetables you already have on hand. You can also buy a bottle of store-bought stir fry sauce if that is more affordable than buying the sauce ingredients.
THURSDAY
Serving Suggestions: I like to serve with avocado, fresh herbs/veggies, cheese, sour cream, chips or crackers.
Budget Modifications: This recipe uses a lot of pantry ingredients and you can add any veggies you have on hand. If you can, make a double batch and freeze half for another time!
FRIDAY
Mini Tortilla Pizzas with Roasted Vegetables
Serving Suggestions: These are great with a big salad.
Budget Modifications: This is a perfect end of week recipe because you can use all the leftover veggies you have in your refrigerator.
