Good morning! I apologize to those of you who have been missing the meal plans lately. Recently, we’ve had a couple illnesses go through the family and I just didn’t have the energy to get them up. But, it was so nice to hear from a couple of you just how much you have been enjoying the meal plans!
Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Serving Suggestions: I like to serve this rigatoni pasta with a side salad and some garlic bread for a complete meal.
Budget Modifications: This recipe is already pretty budget friendly. The recipe calls for two cans of jackfruit, but it can easily be made with just one can.
TUESDAY
Easy Falafel Soup with Tamari Croutons and Tahini
Serving Suggestions: I like to serve my soup with a big handful of croutons. You could also serve with a half sandwich or side salad.
Budget Modifications: This recipe is already very budget friendly and uses mostly pantry ingredients!
WEDNESDAY
Noodles With Cabbage and Carrots
Serving Suggestions: I enjoy a big bowl of noodles by themselves, but you could also add some cooked tofu for extra protein. Vegetarian dumplings or egg rolls would also be a great side option.
Budget Modifications: Use whatever vegetables you already have on hand.
THURSDAY
30 Minute Inside Out Enchiladas with Spiralized Sweet Potato
Serving Suggestions: Serve enchiladas with a side of chips and salsa or beans and rice.
Budget Modifications: This is already a fairly budget friendly recipe.
FRIDAY
Serving Suggestions: I eat this salad by itself or enjoy it over a bed of greens with a big scoop of hummus. Some pita bread would be nice too.
Budget Modifications: You can use whatever veggies you already have on hand, but zucchini is usually pretty affordable.

Our grocery bill is dropping in this time of inflated food prices. It was necessary to buy only one package of chicken for the
week and three meals planned with fish. Husband was never treated to fresh fish and has no taste for it but he’s trying like a
champ for me. Last week he loved butternut squash and cider soup with boursin and pepper open face ciabatta rolls. He was
