Happy Friday! I hope you all are as excited as I am about these new Quick and Easy, Budget Friendly, Vegetarian Meal Plans! Each Saturday morning I will send out the new meal plan that includes: 5 vegetarian dinner recipes that all take 30 minutes or less to prepare (sometimes I will add meals that may take a little bit longer but will provide tips on how to shorten that time) and a printable ingredient list that you can use to help with your shopping list. For each recipe I will also give suggestions on optional side dishes and ways to make the meal even more budget friendly!
Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Tempeh and Chickpea Sloppy Joes
Serving Suggestions: These sloppy joes are great served with fries, chips, soup or salad.
Budget Modifications: This recipe is already pretty budget friendly, but you can buy bottled BBQ sauce instead of making the homemade one in the recipe. It may save some money if you don’t already have the ingredients on hand.
TUESDAY
Smoky Black Bean and Sweet Potato Soup
Serving Suggestions: I like to serve my soup with some fun toppings, like: crackers, tortilla chips, avocado, onion, jalapeño, etc… You could also serve with a side salad.
Budget Modifications: This recipe is already very budget friendly and uses mostly pantry ingredients!
WEDNESDAY
Serving Suggestions: I like to serve the tofu coconut curry over some rice, but you could also use quinoa or noodles.
Budget Modifications: Use whatever vegetables you already have on hand.
THURSDAY
Serving Suggestions: Serve with a side salad or garlic bread.
Budget Modifications: This is already a fairly budget friendly recipe, vegetables that you already have on hand can be used in place of the bell peppers.
FRIDAY
Balsamic Sweet Pepper and Boursin Sandwiches
Serving Suggestions: I like to serve with a side salad, chips or some French fries.
Budget Modifications: Regular red and yellow bell peppers can be used in place of a bag of sweet peppers. You can also use a more affordable bread if ciabatta rolls are more expensive.

This can be printed off and used to figure out what you already have at home and what exactly you need to buy.
