Happy Friday! I hope you all are as excited as I am about these new Quick and Easy, Budget Friendly, Vegetarian Meal Plans! Each Saturday morning I will send out the new meal plan that includes: 5 vegetarian dinner recipes that all take 30 minutes or less to prepare (sometimes I will add meals that may take a little bit longer but will provide tips on how to shorten that time) and a printable ingredient list that you can use to help with your shopping list. For each recipe I will also give suggestions on optional side dishes and ways to make the meal even more budget friendly!
Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Garlic Parmesan Pasta with Roasted Broccoli
Serving Suggestions: This pasta can be served all by itself. If you want something extra, you could add some chickpeas, tofu, tempeh or serve with a side salad.
Budget Modifications: Frozen broccoli can be used instead of fresh broccoli. Just roast it exactly how you normally would.
TUESDAY
Red Beans and Cauliflower Rice
Serving Suggestions: I like to serve these red beans and cauliflower rice with a side of chips or some corn tortillas. You could also add some toppings like guacamole, sour cream, pico de Gallo, etc… You could also serve with a big salad.
Budget Modifications: This recipe is already very budget friendly!
WEDNESDAY
Orange Ginger Zucchini Noodles with Chickpeas
Serving Suggestions: I find that it is enough of a meal served over rice, you could also do quinoa or even rice noodles. Frozen egg rolls or dumplings would be great too.
Budget Modifications: If you don’t have all of the sauce ingredients on hand, you can usually find a bottled orange sauce in the Asian section at the grocery store.
THURSDAY
Mediterranean Chopped Salad Pitas
Serving Suggestions: Serve with a side of chips or fries.
Budget Modifications: There are a few different vegetables in this recipe, feel free to work with what you have on hand and make substitutions if you need to.
FRIDAY
Vegetarian ChickN’ Parmesan Sliders
Serving Suggestions: I like to serve with a side salad or some French fries.
Budget Modifications: This recipe only requires a few ingredients, but most of them will have a few different brand/price options so just go with the cheaper one. I will say that the Kings Hawaiian buns are worth a little splurge if you can!
