This Peanut Butter and Banana Oatmeal Bake is probably as close as I am going to get to making a back to school recipe. I’ve been out of school for quite some time and have no intention of going back and I don’t have any kids yet. Well, I do have Cheeto but he is already so smart he doesn’t need to go to school š
And honestly, I kinda hate school. I was that kid who always cried on the first day of school. I’m pretty sure I cried everyday for the first month of 1st grade and 2nd grade probably wasn’t much better. Back to school meant that the freedom of summer was over and that it was going to be a very long time before it was back. It almost meant mean teachers, lots of homework and only getting to play outside for a limited time each day.
I know that there are kids out there that love school and might even look forward to the first day of school, but I certainly was not one of them! Even now when I see the school buses picking up kids my stomach tenses up and I get a little bit nervous. But mostly I’m thankful that I don’t have to get on that school bus!
But, if you do have to go to school you might as well get to eat a delicious breakfast that is fast and filling! I made my first oatmeal bake last year with this Ginger Peach version and I was amazed at how easy it was to make and how nice it was to just grab a slice and go every morning. Peanut butter and bananas are one of my favorite flavor combos so I knew this one would be a winner too! It is kind of like a mixture between an oatmeal bake and banana bread with some peanut butter thrown in and makes my mornings much brighter!

I absolutely loved this recipe! I used honey instead of brown sugar and pb2 for the peanut butter and they were still delicious and easy! Thank you so much for posting! This is going to be our breakfast for the week

I’m so glad you liked it, Mayra! I make it all the time and eat it for breakfast all week too! I’ll have to try it with the pb2 š

Thanks for sharing . I’d like to ask you here in Brazil there is no maple syrup. Can I replace for honey? Thanks
She Likes Food says
Hi Fernando, You can absolutely replace the maple syrup with honey š
Caitlin says
How would I reheat these in the morning? Also, I don’t have any vanilla extract… Thinking I could add a titch more syrup for sweetness?
She Likes Food says
Hi Caitlin, you could either re-heat in the microwave (quickest) or in the oven. I’m lazy and just eat it cold, but it would probably be better heated up! Yes, you can most definitely omit the vanilla and just add more maple syrup or brown sugar for the sweetness š

I just made this and it is YUMMY! It also made my house smell like Cinnabon. I followed all directions and used dark brown sugar. Really spectacular. I will definitely bring to my next brunch potluck. Thanks!

Victoria says
Hi, does this recipe work with steel cut oats?
Thanks
She Likes Food says
Hi Victoria, I haven’t experimented using steel cut oats with this recipe so I can’t say for sure, but I’m thinking you might need to experiment a little and maybe add a bit more liquid and cook it longer until the oats are cooked through.
Katie says
do you think this would still be good if I eliminated the sugar and maple syrup?

Hi Katie! I think it would still taste great! It just wouldn’t be as sweet, but breakfast doesn’t need to be good to be sweet š

I love school and learning!! I can’t get enough…. now. But when I was a kid, I went through phases. Loved school when I was little, only wanted to socialize though, through middle and part of high school.. then got serious towards the end and learned how much I loved it! So I’ll take your back to school oatmeal bake and make it all year round! This is delicious, Izzy! Pure comfort food! Have a fabulous weekend!

haha, I think I might like school a little bit more now, but I was so shy and just hated being there! I hope you have had a great weekend, Traci!! š

Being homeschooled all my life, I would just laugh when I saw a school bus go by and think “glad I’m not them!” LOL. Now since I’m going to college I guess I’m joining the ranks of everybody else. Haha! This baked oatmeal would be a perfect crazy weekday-morning breakfast for me! I definitely need more of these easy ones up my sleeve! š

That is hilarious, Sarah!! It really was no fun having to leave the house and get on that bus every morning! I hope culinary school is so much fun! I can’t wait to hear about it!

This is definitely a great back-to-school recipe! I actually never used to like oatmeal much, but as I get older, the more I like it. This peanut and banana version sounds delicious! I wish I could dive right into this for breakfast!

I ate so much oatmeal as a kid that I got kinda sick of it too, but oatmeal bakes are so much better than the regular mushy stuff, lol! Thanks Gayle š

This oatmeal sounds so good! Peanut butter and banana go so so well together!

I never think about them either, Ashley! Lol, I’m sure she would! Cheeto is kinda picky but he does love string cheese which is kind of back to school-y!

Cheeto is waaay to smart for school, haha! And that’s so cute you were the sad kid when school started. I was the annoying girl who loved school. Well, at least until high school when I was over it. This oatmeal bake looks delicious. And I am OBSESSED with these pictures Izzy! The background is so pretty : )
