It will last for 4 weeks and we will make one of the meal prep lunch recipes each Sunday for 4 weeks. You can choose what order you want to make them in.
What is the Vegan Meal Prep Challenge?
For four weeks I challenge you to spend less than an hour on Sunday prepping your lunches for the week! Each recipe makes 4 servings. If you’re new to meal prep, the idea is that you prepare the entire meal on Sunday and then you divide it up into your meal prep containers so you have a heathly and delicious lunch all week long. All recipes are gluten free friendly and I’ve also ensured that each recipe has minimal main ingredients so they won’t break the bank either!
Why only 4 servings?
My meal prep lunch recipes usually make 4 servings because I find that much longer than that and the ingredients start to not taste as fresh. Friday lunches are a great time to use up some of your weekly dinner leftovers or make a quick salad or sandwich!
Why participate in the 30 Minute Dinner Challenge?
When meal prep recipes started becoming popular, I didn’t really get the hype. I didn’t have children and never had much of a need to plan ahead. Fast forward a few years and I now have 2 small children and if I don’t meal prep my lunches on Sunday, sometimes I don’t even have time to eat. Or worse, I end up eating a ton of junk food or ordering out. Needless to say, I’m now a big believer in meal prep and I’d love to make you one too! Here are just a few benefits of meal prepping your lunches each week:
- It takes the guess work out of packing your lunch every morning.
- Saves time in the morning when your lunch is already prepared and ready to go.
- Ensures that you have a healthy lunch to eat everyday.
- Takes away the temptation of eating unhealthy takeout for lunch.
- Allows you to stick to a way of eating much easier (I.e. plant based, vegan, gluten free)
I’m also here to help if you already love meal prepping but you are in a recipe rut and tired of making the same meals over and over again. I’ve done my best to come up with fun and exciting recipes that include many different cuisines. My hope is that you can get some new ideas to freshen up your routine!
What you’ll receive:
- 4 Vegan Meal Prep Recipes that are all easy to prepare. Each recipe will make 4-5 servings (all new recipes that are not currently on my site).
- A shopping list with the ingredients for each recipe included.
- Nutritional information for each recipe. I consider all of these meals to be healthy for me. However, I do not follow a low carb, low fat or low sugar diet. I can always try to help you modify the recipe to your dietary needs though!
- Access to a private Facebook group where I’ll share information and we can support each other.
