These Loaded Guacamole Tacos are a fun and delicious no cook recipe that can be enjoyed all summer long! Use mini tortillas to make these into cute little appetizers, or regular sized for an easy lunch or dinner. Serve with beans, rice and chips for a full meal.
Loaded Guacamole Taco Recipe Ingredients
- Avocado – I used three small avocados, but two medium sized avocados would also work. You can make as much or as little of this guacamole recipe as you like and adjust avocado amounts as needed.
- Black Beans – Any kind of beans can be used. I love black beans and avocado together, so I went with them.
- Tomato – You can use regular, large tomatoes or diced up cherry tomatoes. I went with Roma because that’s what I had on hand and they worked great.
- Onion – Any color of onion can be used, I used red onion.
- Red Pepper – The red bell pepper adds come crunch and sweetness. You could also use green, yellow or orange bell peppers if you like.
- Jalapeno – Regular, raw, jalapeños or pickled jalapenos can be used. Add as much as you like.
- Garlic – I love raw garlic, but if you don’t love it as much, you can use garlic powder instead.
- Cilantro – If you don’t like cilantro, you could sub in parsley or another herb you prefer.
- Lime Juice – Fresh lime or lemon juice helps the guacamole stay fresh longer and adds a nice acid to the avocado.
- Salt – To taste.
How To Make Easy Vegetarian Guacamole Tacos
- Peel, pit and dice avocados and add them to a medium sized bowl. Use a fork to give them a quick mash to whatever texture you prefer.
- Next, add in the black beans, tomato, onion, jalapeño, red pepper, garlic, cilantro, lime juice and a pinch of salt. Mix everything well and season with more salt, to taste.
- Heat your tortillas on the stovetop in a pan, or directly on the flame (carefully). Lay warmed tortillas onto a flat surface and add a few spoonfuls of the guacamole to one side. Fold over other side of the tortilla and repeat until you’ve made them all.
- Add any taco toppings you like and enjoy!

If you do have leftovers, store guacamole in a container and lay a piece of plastic wrap across the top, pushing it down so that it is touching the surface of the guacamole. This will keep it fresh the longest.
