This Hummus Toast with Bruschetta is bursting with fresh flavors and is great for an easy breakfast, lunch or snack!
Ingredients

- 1 cup diced cherry tomatoes, or regular tomatoes
- 2 tablespoons chopped fresh basil
- 1–2 cloves garlic, minced
- 2 tablespoons balsamic vinegar
- 2 teaspoons olive oil
- 2–4 slices toast, I like to use a good sourdough
- 1/2 cup hummus, homemade or store-bought
- Salt, to taste
Instructions
- Start by making the bruschetta. Add the diced tomatoes, basil, garlic, olive oil, balsamic vinegar and salt to a bowl and mix until combined. Give it a taste and adjust ingredients accordingly.
- Toast your bread and let cool for a minute. Spread your toast with a big spoonful of hummus and then top with a couple spoonfuls of the bruschetta. Enjoy!
