This Hummus Toast with Bruschetta is bursting with bright summer flavors and is a great way to enjoy all your garden tomatoes and basil!
I know it’s September now and a lot of people are in full fall mode, but my garden is still pumping out the fresh tomatoes and basil so today we are making bruschetta! Hummus Toast with Bruschetta to be exact. It’s easy to make and great for breakfast or lunch.
If I could only grow two things in the garden, it would probably be cherry tomatoes and basil. They’re both quick to grow and being able to enjoy them fresh everyday is amazing! They go together so well and this easy bruschetta recipe is one of my favorite things to do with them.
Bruschetta Hummus Toast Ingredients
- Cherry Tomatoes – You can certainly use regular sized tomatoes and just dice them but, but I love using cherry tomatoes because they’re so sweet and juicy. I grew a few different varieties in my garden this year and the yellow ones are some of the best I’ve ever had!
- Basil – Fresh basil is a must for this recipe! A little fresh basil can go a long way, but it really adds some summer freshness.
- Garlic – I would really recommend fresh garlic in this recipe. I love garlic so I used about 2 cloves but you can use however much you like.
- Olive Oil – The oil is an optional ingredient but I like to add just a small drizzle of olive oil to add some richness.
- Balsamic Vinegar – You can use any kind of vinegar you like (apple cider, red, white) but balsamic vinegar is the classic bruschetta vinegar. It’s deep and flavorful and goes so well with the tomatoes and basil.
- Salt – I add a little bit of salt, just to taste. I don’t add pepper but you certainly can. Sometimes I top the toast with some freshly cracked black pepper though.
- Bread – I like to use a good sourdough for my toast but any kind of bread will work.
- Hummus – I used some regular store-bought hummus I got from Trader Joe’s but a flavored hummus would be great too!
