Good morning! A few weeks ago, I polled my Instagram followers to find out if they still had access to a good supply of eggs, and most people said yes. So, I decided to post this Stacked Huevos Rancheros recipe for you today.
I am feeling very thankful right now that our friend has chickens, and she’s been giving us lots of fresh eggs. This Huevos Rancheros recipe is one of my favorite things to make with them.
What Are Huevos Rancheros?
Simply translated, it means eggs and beans. Huevos Rancheros is a traditional Mexican breakfast that I’ve seen made in many different ways. It always includes beans, eggs, corn tortillas, and (usually) cheese. Some recipes, especially in New Mexico, have chile or enchilada sauce on them. I decided to go with the traditional ingredients and added a few fun toppings.
Huevos Rancheros Recipe Ingredients
- Corn Tortillas – Corn tortillas are traditional to huevos rancheros, but if you prefer flour, that will also work. Corn tortillas are usually naturally gluten-free. This isn’t necessary, but sometimes they tend to be a little dry, so heating the tortillas with a bit of oil or butter in a pan helps loosen them up, making them taste better.
- Refried Beans – Canned or homemade, both will work in this recipe.
- Eggs – This recipe calls for two eggs per serving. Cook them however you like. My favorite kind of egg is scrambled, which I used in my recipe.
- Shredded Cheese – Cheddar is a great option, and Monterey or pepper jack are good choices if you like a bit of a kick.
How To Make Huevos Rancheros
My stacked version is so easy to make! Here’s how I do it:
- Preheat oven to 400 degrees F. Warm the tortillas in a skillet with a small amount of olive oil or butter.
- Assemble your huevos rancheros: Place one corn tortilla down, spread half the refried beans, and top with 1 Tablespoon cheese. Add the second tortilla and spread with the remaining refined beans, eggs, and cheese.
- Place on a sheet pan and bake until cheese is melted and beans are warmed through about 10 minutes. Top with your favorite toppings and enjoy.
How To Enjoy Your Huevos Rancheros
You can go as minimal or as crazy as you want with the toppings. Here are a few I love:
- Plain Greek yogurt or sour cream
- Salsa or hot sauce
- Jalapenos
- Avocado
- Fresh herbs, like cilantro
- Chili sauce
- Pico de gallo
