This is always a funny time of year. Where I live, we are enjoying a wonderful spring; where I used to live, it has already hit 90 degrees and isn’t slowing down. Then, there are places like Colorado that are getting snow right now! These Healthy Ranch Roasted Carrots are the perfect compromise recipe because they’re warm and cozy but also nice and fresh.

Why You’ll Love These Ranch-Roasted Carrots
They are so easy to make! When I made these Ranch-Roasted Carrots, I bought a small bag of carrots, peeled them, and cut them into chunks. Honestly, I preferred how they looked that way. 🙂 But to make this recipe even easier, you can get a big bag of baby carrots and use them instead.
To make these roasted carrots, toss everything together in a large bowl and bake until fork-tender and delicious!

- Vitamins and beyond – Cashews, which contain zinc, vitamin E, and copper, support eye health. They also contain beneficial antioxidants that boost the immune system, and tryptophan, which helps us fall asleep. They also contain Vitamin C, A, and potassium (immune system, vision, and blood pressure, respectively), carotenoids, retinol, and biotin (skin health!).
- Skin, Heart, and Brain Health – Carrots are superfood. They contain retinol, lycopene, and biotin, which are great for the skin; carotenoids that protect the brain; and potassium, which helps manage blood pressure.
Recipe Tips for Healthy Ranch-Roasted Carrots
- You can use a bag of baby carrots instead of peeling and cutting your own.
- I like to use my Homemade Ranch Seasoning for this recipe because I know exactly what’s in it, and it’s healthier than the store-bought packet. However, you could use that instead if you don’t want to make your own. It’s a bit stronger in flavor, so I suggest using just a few teaspoons.
- Feel free to add as many other vegetables as you like, just make sure they all have the same roasting time.
- These roasted carrots are best enjoyed warm out of the oven, but if I have leftovers, I also snack on them cold out of the refrigerator.
How To Make These Ranch-Roasted Carrots
These Healthy Ranch-Roasted Carrots are great as a side dish for dinner or a healthy snack. My 2-year-old loved them and kept asking for more 🙂 I usually roast my veggies with olive oil, salt, and pepper, but I love having my ranch seasoning on hand to make my roasted veggies a bit more exciting.
- Preheat oven to 400 degrees F. Peel carrots and cut them into small finger-sized pieces. You could also use baby carrots.
- Place carrots in a bowl and toss with olive oil and ranch seasoning. Spread carrots on a large sheet pan and bake until fork tender, flipping once, 35-40 minutes.
Roasted Carrots Frequently Asked Questions
- This recipe is gluten-free.
- This recipe is vegan.
- Can I add other veggies to make ranch-roasted vegetables? Yes! I went with carrots because carrots and ranch are such a classic flavor combo, but you can add any other veggies you like. I’ve meant to make ranch-roasted potatoes for a while now and will hopefully get around to it this summer. If you add other vegetables, ensure they have the same roasting time as the carrots. Here are a few ideas for other veggies to add in: potato, sweet potato, cauliflower, broccoli, bell pepper, parsnips.
- Can I use baby carrots instead? Yes, you can!
- How long will these stay fresh? They should last up to four days if stored in an airtight container in the fridge.
