- 1 lb pasta, your favorite kind
- 1 cup grated parmesan cheese
- Salt and black pepper, to taste
Green Goddess Sauce
- 1 cup packed fresh cilantro leaves
- 1 cup packed fresh parsley leaves, I like to use flat leaf parsley
- 1 cup packed fresh basil leaves
- 1/2 cup diced green onions
- 2–3 cloves garlic
- 1/2 cup extra virgin olive oil
- 1/2 cup freshly squeezed lemon juice, about 3 lemons
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Fill a large pot with water and bring to a boil. Add in your pasta, along with a big pinch of salt, and cook according to package directions. Drain pasta well and then add back into your pot.
- Make the sauce while the pasta is cooking. To a blender, add all sauce ingredients and then blend until completely combined, and a smooth sauce is formed.
- Pour the sauce over the hot pasta and mix together well. Add in the parmesan cheese and mix again, until everything is completely combined. Serve Green Goddess pasta immediately, while warm.
- If you prefer to make this recipe as a side dish/pasta salad: drain pasta and rinse with cold water for a couple of minutes. Once pasta has cooled down, pour the sauce and parmesan cheese over and mix until combined. Store in the refrigerator until ready to serve.
