Greek Salad Sandwiches with Hummus Recipe Ingredients
- Lettuce -I used romaine lettuce because it’s traditional in Greek salad. I like that it’s crunchy and stands up well to the dressing. You can use whatever kind of lettuce you like for this recipe.
- Veggies – You can use any Greek-inspired vegetables. I used tomato, red onion, kalamata olives, roasted red peppers, artichoke hearts, cucumber, fresh herbs, and garlic. If you don’t like the taste of raw garlic, use about 1/4 – 1/2 teaspoon garlic powder instead.
- Dressing – The dressing is very simple and made using olive oil, red wine vinegar, dried oregano, salt, and pepper. You can use a bottled Greek dressing if you have one on hand.
- Hummus – I used plain hummus because I wanted the flavors of the Greek salad to stand out, but you can use whatever flavored hummus you like. Garlic or roasted red pepper are great!
- Bread—I used thick sourdough bread, but you can use any bread you like. Because this sandwich tends to be messy, wrapping it in a tortilla or parchment paper will prevent the filling from falling out.
How To Make Greek Salad Sandwiches
- Chop all the salad ingredients into small pieces about the same size. You can cut them a little larger than I did if you like.
- To a medium bowl, add the lettuce, cucumber, tomato, red onion, kalamata olives, artichoke hearts, red bell peppers, fresh herbs, garlic, feta cheese, dried oregano, olive oil, and red wine vinegar. Mix everything together and season with salt and pepper to taste.
- Prepare the bread or wrap. I used cold bread, but you can warm or toast your bread or wrap it if desired. Spread a couple spoonfuls of hummus on the bottom slice of bread and then top with a few spoonfuls of the greek salad. You can pack as much on as you like.
- The sandwich is a little messy; to prevent the filling from falling out, I recommend wrapping the sandwich in parchment paper or using a large tortilla to make a wrap instead.

Ingredients
- 2 cups chopped romaine lettuce
- 1 cup diced tomato
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/2 cup chopped kalamata olives
- 1/2 cup chopped marinated artichoke hearts
- 1/2 cup chopped roasted red pepper
- 4 oz diced or crumbled feta cheese
- 1/4 cup fresh herbs (such as dill, oregano, parsley, mint)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste (about 1/2 tsp salt and 1/4 tsp pepper)
- 4–6 slices of bread, or sandwich buns
- About 1 cup hummus, homemade or store-bought
