As much as I enjoy cooking, breakfast is one of my least favorite meals. I like to take it easy in the morning, which means not having to cook a big breakfast for everyone. These Frittata Breakfast Sandwiches are the perfect solution to getting a healthy meal on the table without having to do much actual cooking. They’re great for meal prep and last for about 4-5 days in the refrigerator.
What Is A Fritatta?
A frittata is an egg dish that is usually filled with vegetables and cheese and then baked in the oven. It resembles a quiche or omelet, but a frittata is crustless. Usually, the eggs, vegetables, and cheese are baked together in a skillet. You can get as creative as possible with your frittata flavorings and sandwich toppings!
Fritatta Breakfast Sandwich Recipe Ingredients and Substitutions
- Eggs – I used whole eggs for this frittata recipe. You could also probably just use egg whites if you prefer.
- Cottage Cheese – Cottage cheese adds extra protein and gives the frittata a richer taste and texture. You can replace the cottage cheese with heavy cream, sour cream, or plain Greek yogurt. I like to add my cottage cheese to a food processor and blend until smooth for a better texture.
- Vegetables – You can use whatever veggies you have on hand. I used zucchini, red bell pepper, yellow bell pepper, and red onions. Spinach, kale, mushrooms, or broccoli would also work great.
- English Muffins – I used English muffins for these breakfast sandwiches, but any kind of bread or biscuit can be used. You could also slice the frittata smaller and make a breakfast wrap with it.
- Cheese – Use whatever cheese you prefer. I used Muenster cheese because it’s nice, creamy, and melts well, but a sharp cheddar or pepper jack would be great, too.
- Optional Toppings – You can go simple and just use the frittata patty or you can add your favorite breakfast sandwich toppings. I suggest dressed greens, cheese, tomato, avocado, hot sauce, and veggie sausage patty.
How To Make The Best Vegetarian Breakfast Sandwiches
- Preheat the oven to 400 degrees F. Grease a 9×13 baking dish well with either cooking spray or butter. Chop all of your vegetables into bite-sized pieces. Heat a large pan over medium heat and add about 1 teaspoon olive oil. Once the oil is hot, add your diced vegetables and season with a big pinch of salt and pepper.
- Mix everything together and cook veggies until softened and starting to brown, 5-7 minutes. Add the cooked veggies to the bottom of the baking dish in a single layer.
- Crack the eggs into a medium-sized bowl. Add the cottage cheese, salt, and black pepper. Whisk mixture together well and then pour over the veggies. Gently tilt the baking dish back and forth to ensure the eggs reach all the edges of the pan.
- Place the frittata in the oven and bake until the eggs are completely cooked through and firm to the touch, about 20-25 minutes. Remove from the oven and let sit until cool enough to handle. Remove the frittata bake from the pan and cut it into about six equal-sized pieces.
- Assemble your breakfast sandwiches: Cook English muffins in the toaster until lightly browned and crispy. Add your favorite breakfast sandwich ingredients, along with a slice of the frittata, and enjoy!

- 3–4 cups diced vegetables, such as: zucchini, bell peppers, onion, mushrooms, spinach, kale, broccoli, tomato
- 3 large eggs
- 1/4 cup blended cottage cheese (blend cottage cheese in a blender or food processor until smooth)
- Olive oil or cooking spray
- Salt and black pepper
- English muffins, or favorite bread
- Optional toppings: cheese, mixed greens, tomato, avocado, hot sauce, pickled jalapenos
