Ingredients

  • 1/2 red pepper, julienned
  • 1/2 green pepper, julienned
  • 1/2 small red onion, julienned
  • 1/2 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 3 avocados
  • Juice of 1 lime, about 1 tablespoon plus 1-2 teaspoons
  • 1 clove garlic, minced
  • 1/3 cup crumbled queso fresco cheese
  • salt, to taste, 1/4 teaspoon – 1/2 teaspoon

Instructions

  1. Heat a large pan over medium heat. Add oil, green pepper, red pepper, onion, and all the spices. Cook for 10 minutes, stirring occasionally. Let cool and then chop into bite size pieces
  2. Cut avocados in half, remove the seed and score them with a knife. Scoop out the avocado and place in a medium sized bowl. Mash avocados with a fork to desired texture. Add lime juice, onion and pepper mixture, garlic, queso fresco, and salt to taste. Mix until everything is combined.
