Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
30 Minute Black Bean Soup with Pico De Gallo
Serving Suggestions: Serve soup with chips, cracker, salad or even some cheese quesadillas.
Budget Modifications: This recipe is really budget friendly and made with mostly pantry staples.
TUESDAY
BBQ Cauliflower and Chickpea Tacos
Serving Suggestions: Serve tacos with a side or chips and dip or bean and rice.
Budget Modifications: If you don’t have all the seasonings on hand, you could use a bottled or packaged BBQ or fajita seasoning.
WEDNESDAY
Vegetarian Sloppy Joes with Lentils and Chickpeas
Serving Suggestions: Serve with a side of fries, chips or veggies.
Budget Modifications: If you don’t have many of the sauce ingredients on hand, you can buy a bottled BBQ sauce to use.
Time Saving Tip: You can find canned lentils at most grocery stores these days, which would cut out the lentil cooking time.
THURSDAY
Roasted Sweet Potato, White Bean Broccoli Bowls
Serving Suggestions: To me, this bowl is really filling by itself! I like to add some fresh avocado or fresh greens sometimes to bulk it up a little.
Budget Modifications: Use whatever veggies you like if you don’t have broccoli or sweet potato on hand. You could also preface the quinoa with grain of choice.
Time Saving Tip: Cook quinoa ahead of time and cut up the broccoli and sweet potato a couple days before.
FRIDAY
Serving Suggestions: Serve with chips and salsa or a big salad.
Budget Modifications: Taco sauce can be a little speedy sometimes, you could use salsa instead.
You can either make your own crust or buy a pre-made crust from the grocery store. I love using the pre-made, refrigerated pizza dough from Trader Joe’s. It’s affordable and really good!
