I always say that I’m not a big dessert person, but I’m starting to think that might be a lie. I might not make dessert very often, but when it’s around I eat it like crazy. Like, I just keep stuffing cookie after cookie into my mouth and can’t even be stopped when I start to feel full.
I guess that is why I don’t make dessert that often! These cookies are actually pretty healthy though so I don’t feel too bad about it. They are vegan, gluten free and can be made with no refined sugar (if you can find a peanut butter that has no added sugar).
These days I don’t buy too many Girl Scout cookies, mainly because they only have one gluten free kind and they’re not anything to write home about. But, back in the day I was pretty into them. I never got into the thin mint craze like most other people but I always loved the peanut butter sandwich cookies (I don’t remember what their fancy name was).
Unlike those cookies, these ones are made up of a soft peanut butter cookie, although you could leave the cookie part in the oven a little longer if you wanted them to be hard. I normally won’t turn down a cookie, but soft and chewy cookies are my favorites. And then the peanut butter filling makes them even more soft and chewy and then you start eating them and can’t stop! But, like I said before, they are pretty healthy when you think about it so I say, eat away!
PrintDouble Peanut Butter Sandwich Cookies {vegan, gluten free}
- Total Time: 55 minutes
- Yield: 20-25 1x
Ingredients
- 1 cup coconut sugar
- 1 cup creamy peanut butter, no stir
- 1 tablespoon maple syrup
- 1Ā½ teaspoons vanilla extract
- 1 cup oat flour*
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 cup almond milk
Peanut Butter Filling:
- 1–2 cups peanut butter, depending on how thick you want the filling to be. You can use creamy or crunchy peanut butter
Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, with an electric mixer, cream together the peanut butter and coconut sugar for about 1 minute. Then add in the vanilla extract and maple syrup and mix again until combined.
- In a medium sized bowl add the oat flour, baking powder, and salt. Mix until combined.
- Slowly add the flour mixture to the peanut butter mixture in two batches and mix until everything is combined. Add the almond milk and mix again.
- Divide the cookie dough in half. Line a 9×13 inch baking dish with parchment paper and press in half of the dough mixture. You want the cookie dough to cover the entire pan in a thin layer.
- Place the pan into the oven and bake for 12 minutes. The cookie dough may seem underdone, but it will firm up a little as it cools. Re-peat process with the remaining cookie dough. You can also use a fork to make hatch marks on the dough if desired.
- Cool the sheets of cookie on cooling racks until completely cooled, about 30 minutes. Next, slide one of the cookies back into the baking dish lined with parchment paper (if you do the hatchmarks you can gently flip the cookie sheet over on a cutting board before sliding it back in) and spread with desired amount of peanut butter. Slide the remaining cookie on top of the peanut butter and gently press down.
- You can either cut immediately and enjoy or place in the refrigerator for about 30 minutes to allow cookies to firm up before you cut them. I used a small round cookie cutter to cut mine, but you could also just cut them in squares with a knife.
Notes
*You can easily make your own oat flour by throwing some oats in the food processor or blender until they have a flour like texture.

Gah peanut butter is such a weakness of mine … especially in cookies! Yeah, I don’t think I’d have any self-control around these!
I used to make desserts fairly often but now I don’t … I totally will eat all of it if it’s in the house!! haha

That peanut butter cookie alone looks amazing. I love nut butter based cookies because, like you, I prefer soft and chewy and the nutty flavor. š Hope the pregnancy is progressing well Izzy!

Me too, Katie! Almond butter has been so expensive lately but I bet they would be so good with that too! It is! Starting to feel really tired, but other than that it’s been going well, thank you!
Alyssa @ My Sequined Life says
Yessss!! That stack would be in trouble if I were around. š I haven’t had Do-Si-Dos in forever (that’s what our region called those Girl Scout cookies) but now I have a big craving! I think I’ll stick with your healthier alternative though!

I thought they were called something like that! You can easily get your craving satisfied if you make these, haha š
