A simple and easy weeknight dinner that’s also really flavorful and delicious!
I hope you all had a great weekend! It’s been way too hot here lately but thankfully my in-laws are visiting this week and staying somewhere with a pool. So, that’s where I’ll be for the next 7 days!
These Crispy Potato Tacos are based on a one of the first recipes I ever posted here. I’m a little embarrassed to share the link, but it’s also fun to see how my photography has evolved in the past 3 years!
But one thing that hasn’t changed is my love of potatoes and my love of tacos! This taco recipe is still based on the potato tacos from one of the Mexican restaurants in town, but we don’t really go there as much anymore.
The service seemed to go downhill a bit and they started charging for chips. They do still have the best margaritas in town though! But, sometimes it’s much easier to re-create something at home than to go out and my husband and I are quite the homebodies so it works out.
These Crispy Potato Tacos are really easy to make because there’s just one main ingredient. And, when there are very few ingredients in a recipe you gotta make them good! I boil the potatoes and then fry them up crispy with a few spices.
These are such a great vegetarian/vegan taco option that even my meat eating husband loves!

Crispy Potato Tacos
- Total Time: 40 minutes
- Yield: 4-6 1x
Ingredients
- 2 large russet potatoes, cut into bite size pieces
- 2 teaspoons olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Scant 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Corn tortillas
- Optional toppings: lettuce, tomato, avocado, salsa, onion, jalapeno, cilantro
Instructions
- Add chopped potatoes to a large pot and cover with cold water. Bring potatoes to a boil and cook until fork tender, 15-20 minutes. When done, drain potatoes well.
- Heat a large skillet over medium heat and add olive oil, potatoes and all the spices. Stir until all the spices are evenly incorporated and then arrange in a single layer. Let potatoes cook for 3-5 minutes, until crispy, and then flip and repeat.
- Fill corn tortillas with desired amount of potatoes and top with favorite toppings.
- Prep Time: 10 mins
- Cook Time: 30 mins

Hello there, new to the vegan world and curious if we should add taco seasoning to the potatoes when they’re frying? That way we still get the “taco” flavoring, or do you call these tacos simply because they’re arranged in a shell? Just curious, thanks in advance for any reply! (I might try it soon and get back to you too ????)
Hi! The recipe calls for a few different spices that are similar to taco seasoning so you don’t need anything other than what the recipe calls for! Unless you want to sub out taco seasoning for those spices 🙂

Hi..I’m new to vegan eating,and would like to know if using jackfruit instead of the potatoes would work?
I feel like it might be more like machaca beef if you cooked the jackfruit in taco seasoning and then used it with all the other goodies.
Please let me know if that sounds reasonable.

Hi Joan, I think it would definitely work! You might have to add a little water to help break down the jackfruit but I think the seasonings would work well with it 🙂

I tried making this for dinner tonight and my potatoes turned in to mashed potatoes they were so soft and they didn’t crisp at all, just stuck to the bottom of my pan 🙁 it tasted good what I could get out of the pan!! 🙂

Boiled the potatoes for too long. So they are now home fries tacos. I’m using the frozen ones next time. Great flavor though. Will definitely try again.

I’ve made something similar, but instead of frying the potatoes I mash them up and add cooked soy chorizo and spices as needed. My husband (who doesn’t enjoy potato tacos) loved them!

I made this recipe in a bowl since I didn’t have any tortilla’s. It was excellent as a bowl recipe too. I will definitely be making again. I fried potatoes and topped them with avocado, lettuce and salsa.

My family and I love this recipe! I’ve never made potato tacos before but now that my husband has been eating vegan for a few months, I went in search of vegan recipes. Have you tried these with, or received feedback about, using sweet potatoes or jewel yams?
I haven’t but I think they would work great! They might not get as crispy but it would still taste great 🙂

Ok, so I LOOOOOOOVE anything taco and had to try but I suppose I boiled my potatoes a little too long because when it was frying time they turned into mush 🙁 I’ll certainly try again but won’t boil potatoes as long
Oh no! Yeah, it sounds like you did boil them a little too long. You want them fork tender but still with a little give so you can cut them and they don’t fall apart. Sorry about that 🙂
