Description

These Cheesey Broccoli Rice Casserole Bites are healthy, filling and super kid friendly!


Ingredients

Scale
  • 2 cups cooked rice
  • 1 1/2 cups finely chopped cooked broccoli, I used frozen
  • 1 cup shredded sharp cheddar cheese, plus more for topping
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Pre-heat oven to 400 degrees F. Line a large baking sheet with parchment paper or a non-stick mat. Add all ingredients to a large bowl and mix until combined.
  2. Add half the mixture to a food processor and blend until combined. Add back to the bowl and mix everything together.
  3. Use a tablespoon scoop to scoop the mixture onto the baking sheet and then use your fingers to pat the top down. Top each one with a small spinke of cheese.
  4. Bake bites until cheese is melted and bottoms are golden brown, 15-20 minutes. Let cool for 5-10 minutes before eating.
