Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Spicy Baked Pasta with Vegetarian Meatballs
Serving Suggestions: Serve with your choice of salad, veggies or garlic bread.
Budget Modifications: If you don’t have Calabrian chilis already, you can skip them and just add some red pepper flakes.
TUESDAY
Vegetarian Soft Taco Casserole
Serving Suggestions: Serve with a side of chips and dip, salad or beans and rice.
Budget Modifications: Corn tortillas can be used instead of flour tortillas.
WEDNESDAY
Serving Suggestions: Serve with a side of egg rolls, spring rolls, or potstickers.
Budget Modifications: You can use whatever veggies you have on hand. Spaghetti noodles will work and are probably cheaper than Asian style noodles.
THURSDAY
Roasted Sweet Potato Burrito Bowls
Serving Suggestions: Serve with a side of chips and dip.
Budget Modifications: You can use a can of refried beans instead of making your own.
FRIDAY
Mini Tortilla Pizzas with Roasted Vegetables
Serving Suggestions: Serve with a side salad or garlic bread.
Budget Modifications: Use whatever veggies you have on hand already.
