Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Vegetarian Stuffed Pepper Casserole with Soyrizo
Serving Suggestions: Serve soup with chips, crackers, or a side salad. It really is filling by itself though!
Budget Modifications: This recipe is really budget friendly and made with mostly pantry staples. Skip the goat cheese and add an extra can of beans in place of soy chorizo if needed!
TUESDAY
Crispy Baked Sweet Potato and Back Bean Tacos
Serving Suggestions: Serve tacos with a side or chips and dip or beans and rice.
Budget Modifications: Omit the avocado salsa and instead top with regular salsa or some easy guacamole.
WEDNESDAY
Lemon Tahini Chickpea Salad Pitas
Serving Suggestions: Serve with a side of fries, chips or veggies.
Budget Modifications: Use whatever fresh veggies you have on hand. This chickpea salad can be eaten on a pita or you can use tortillas or bread if you already have those on hand.
THURSDAY
5 Ingredient Baked Ziti with Spinach and Chickpeas
Serving Suggestions: Serve with a salad and garlic bread, if desired.
Budget Modifications: This recipe only has 5 ingredients making it pretty budget friendly!
FRIDAY
Sweet and Spicy Chili Tofu Bowls
Serving Suggestions: Serve with a side of rice and veggies.
Budget Modifications: If you don’t already have the sauce ingredients on hand, it may be cheaper to just buy a bottle of Asian chili style sauce.
