Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Sheet Pan Sweet Potato Black Bean Fajitas
Serving Suggestions: Serve with a side of beans and rice, chips and dip or salad.
Budget Modifications: You don’t have to use three different colors of bell peppers, green peppers are the cheapest of all the colors.
TUESDAY
Serving Suggestions: Serve with a side of chips, fries or a salad.
Budget Modifications: Any kind of bread can be used for these sandwiches. If not using fresh mozzarella, I would suggest using the pre-sliced thin slices of mozzarella.
WEDNESDAY
Serving Suggestions: Serve with rice or noodles and a side of cooked vegetables, egg rolls, dumplings or potstickers.
Budget Modifications: You can buy a jar of peanut sauce at most grocery stores if you don’t have all the peanut sauce ingredients on hand.
THURSDAY
Serving Suggestions: Serve with of beans and rice, chips and dip or a salad.
Budget Modifications: There aren’t very many ingredients in this recipe!
FRIDAY
Korean Inspired Tofu and Vegetable Bowls
Serving Suggestions: Serve with a side of rice or noodles.
Budget Modifications: Use whatever veggies you have on hand.
