Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family. I will try to keep all the recipes to 30 minutes, but may add some in that take a little longer, and then add some tips on ways to shorten them.

MONDAY
Serving Suggestions: Serve with chips and salsa/guacamole, side salad or beans and rice.
Budget Modifications: This recipe is really budget friendly and made with mostly pantry staples, but you can use any veggies you have on hand.
TUESDAY
Serving Suggestions: Serve with a side salad, cooked veggies or garlic bread.
Budget Modifications: Feta can be a little expensive sometimes, you can sub any other cheese you like if needed.
WEDNESDAY
Serving Suggestions: Serve with a side of fries, chips or veggies.
Budget Modifications: These only require a few ingredients, but any kind of bread and cheese can be used. Skip the fresh dill if you don’t already have it on hand, it can be expensive and there is some dill flavor in the pickles already.
THURSDAY
Coconut Curry Roasted Butternut Squash Soup
Serving Suggestions: Serve with a salad and garlic bread, if desired.
Budget Modifications: Butternut Squash can be a little pricy since it is sold by the pound and it can be pretty heavy, you only need a medium sized butternut squash for this recipe and you can even cut the recipe in half and use a small one.
If you don’t already have garam masala and curry powder on hand, some grocery stores have a bulk spice section where you can buy the exact amount you need.
FRIDAY
Serving Suggestions: Serve with a side salad or garlic bread.
Budget Modifications: This recipe only requires 5 ingredients so it is pretty budget friendly, but cheaper versions of some of these ingredients are probably available at a different grocery store.
