Description
These Crispy Rolled Bean and Cheese Burritos only require 3 main ingredients and take about 5 minutes to make! They’re great for a last minute weeknight dinner that feels like something you might get at a restaurant! These Bean and Cheese Burritos are a great vegetarian meal that is family friendly, kid friendly and budget friendly.
Ingredients
- 1 1/4 cup refried beans*
- 1/4 teaspoon cumin, optional
- 1/4 teaspoon paprika, optional
- 1/4 teaspoon granulated garlic, optional
- 4 large flour tortillas
- 1 cup shredded cheese, or more if desired
- Cooking spray or oil
Instructions
- Add the refried beans to a medium sized bowl and add in the spices. Depending on how thick your refried beans are, you can add a tablespoon or two of warm water to loosen them up. Mix refried beans until smooth and spices are mixed in.
- Heat a large pan over low-medium heat and spray with cooking oil, or add your regular cooking oil/butter to the pan.
- Lay tortilla flat and spread on a thin layer of the refried beans. Depending on how large your tortillas are, you will want to use about 1/4 – 1/3 cup of refried beans. Top with a layer of shredded cheese and make sure to spread it to the edges of the tortillas.
- Tightly roll the tortilla up, using your hands, into a roll shape. Place in the pan, seam side down and allow to cook until browned. The cheese should melt and seal the tortilla together. Cook burrito a few minutes on each side, until golden brown
- Serve crispy rolled burritos with your favorite toppings and enjoy!
Notes
*You can use homemade refried beans that are already seasoned, you can add your own seasonings to a can of refried beans or you can just use the refried beans right out of the can without adding any seasoning. Some brands taste pretty good already!
