Bean and cheese burritos have always been one of my go-to dinners when I don’t have many ingredients on hand, and I want something quickly. These Crispy Rolled Bean and Cheese Burritos are a fun way to change up burrito night, and they’re very budget-friendly.
I especially like overfilling them with cheese so it oozes out and gets crispy outside. These easy bean burritos are great served with a side salad, chips and dip, or beans and rice.
Crispy Rolled Bean and Cheese Burrito Recipe Ingredients
- Refried Beans – I used a can of refried beans and mixed some spices. You can also use homemade refried beans.
- Spices – I used cumin, paprika, granulated garlic, and salt to flavor the canned refried beans. Adding the spices is totally optional.
- Cheese – I used shredded cheddar cheese, but you can use any kind you like. Vegan cheese can also be used, though it may not quite melt as well.
- Tortillas – I used a medium-large flour tortilla, but you can use any size tortilla you like. Small tortillas for kids are a great option.
- Oil – I used olive oil, but you can use any kind you like. Cooking spray and butter also work well.
- Optional Toppings – I like to serve my bean burritos with pico de gallo, guacamole, and lettuce. Other great options are salsa, hot sauce, or your favorite burrito sauce. The burritos are great with a side of lettuce/salad, chips, dip, beans, or rice.

How To Make Crispy Bean Burritos
- Add the refried beans to a medium-sized bowl and add the spices. Depending on how thick your refried beans are, you can add a Tablespoon or two of warm water to loosen them up. Mix the refried beans until smooth and spices are mixed in. This part is totally optional. You can also use the beans straight from the can without adding any seasonings.
- Heat a large pan over low-medium heat and spray with cooking oil, or add your regular cooking oil/butter to the pan. I like to allow a small amount of oil to heat up a bit before adding the burrito.
- Lay the tortilla flat and spread it on a thin layer of refried beans. Depending on how large your tortillas are, you will want to use about 1/4 – 1/3 cup of refried beans. Top with a layer of shredded cheese, making sure to spread it to the edges of the tortillas.
- Tightly roll the tortilla up, using your hands, into a roll shape. Place in the pan, seam side down, and allow to cook until browned. The cheese should melt and seal the tortilla together. Cook the burrito for a few minutes on each side until golden brown.
- Serve crispy rolled burritos with your favorite toppings, and enjoy!
