These Crispy Rolled Bean and Cheese Burritos are a family and budget friendly dinner that will be on the table in under 15 minutes! You only need 3 main ingredients and you can top your burritos with all your favorite toppings.
Bean and cheese burritos have always been one of my go-to dinners when I don’t have many ingredients on hand and I want something quickly. These Crispy Rolled Bean and Cheese Burritos are a fun way to change up burrito night and they’re very budget friendly!
I especially like overfilling them with cheese, so the cheese oozes out a little and gets nice and crispy on the outside! These easy bean burritos are great served with a side salad, chips and dip, or beans and rice.
Crispy Rolled Bean and Cheese Burrito Recipe Ingredients
- Refried Beans – I used a can of refried beans that I mixed spices into. You can also use homemade refried beans.
- Spices – I used cumin, paprika, granulated garlic and salt just to add a little extra flavor to the canned refried beans. Adding the spices is totally optional though!
- Cheese – I used a shredded cheddar cheese, you can use any kind of cheese you like. Vegan cheese can also be used, it just may not quite get as melty.
- Tortillas – I used a medium-large sized flour tortilla. You can use any size of tortilla you like. It would be cute to make small ones for the kids!
- Oil – I just used olive oil, but you can use any kind of oil you like. Cooking spray or even butter would work well too.
- Optional Toppings – I like to serve my bean burritos with pico de Gallo, guacamole and some lettuce. Other great options would be: salsa, hot sauce, or other burrito sauce of choice. The burritos are great with a side of lettuce/salad, chips, dip, beans or rice.
How To Make Crispy Bean Burritos
- Add the refried beans to a medium sized bowl and add in the spices. Depending on how thick your refried beans are, you can add a tablespoon or two of warm water to loosen them up. Mix refried beans until smooth and spices are mixed in. This part is totally optional, you can just use the beans straight from the can without adding any seasonings.
- Heat a large pan over low-medium heat and spray with cooking oil, or add your regular cooking oil/butter to the pan. I like to allow the oil to heat up a little bit before adding the burrito. You only need a small amount of oil.
- Lay tortilla flat and spread on a thin layer of the refried beans. Depending on how large your tortillas are, you will want to use about 1/4 – 1/3 cup of refried beans. Top with a layer of shredded cheese and make sure to spread it to the edges of the tortillas.
- Tightly roll the tortilla up, using your hands, into a roll shape. Place in the pan, seam side down and allow to cook until browned. The cheese should melt and seal the tortilla together. Cook burrito a few minutes on each side, until golden brown
- Serve crispy rolled burritos with your favorite toppings and enjoy!

- Can I make these burritos gluten free? Yes, just use gluten free tortillas! You may need to warm them a little first so they don’t break when rolling them.
- Can I make these bean and cheese burritos vegan? Yes, just use vegan cheese! It may not melt quite as well as regular cheese, but it should be able to seal the burrito together.
- Can these burritos be made ahead of time and frozen? If making these burritos ahead of time, roll them up and freeze before cooking. Bake from frozen.
- How long will leftovers last in the refrigerator? Leftover burritos should last 4-5 days in the refrigerator when stored in an airtight container. Heat burritos either in the oven, stovetop or microwave.
- Can I add additional ingredients? You can, you just want to make sure the burrito isn’t too thick to roll up.

Notes
*You can use homemade refried beans that are already seasoned, you can add your own seasonings to a can of refried beans or you can just use the refried beans right out of the can without adding any seasoning. Some brands taste pretty good already!
