These BBQ Black Eyed Peas are cozy, flavorful and filling!
Ingredients

- 2 cans black eyed peas, drained and rinsed
- 2 teaspoons olive oil, or oil of choice
- 1 small onion, diced
- 2–3 cloves garlic, minced
- 1 cup marinara sauce
- 1 tablespoon ketchup
- 2 teaspoons apple cider vinegar
- 2 teaspoons tamari, or soy sauce
- 1 tablespoon pure maple syrup
- 3/4 teaspoons smoked paprika
- 1/2 teaspoon mustard powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley
- Salt and black pepper, to taste
- Optional Bowl Ingredients: Kale Salad, Collard Greens, Swiss chard, Corn Bread, Grits, Polenta
Instructions
- Start by heating a large pan over medium heat and adding two teaspoons olive oil and the onions. Cook for 2-3 minutes until onions are soft and then add in garlic. Cook for another 1-2 minutes.
- Add in the marinara sauce and all remaining ingredients, excluding the black eyed peas. Stir until sauce is combined and let cook for 3-5 minutes to allow the flavors to develop.
- Next, add in the black eyed peas, mix everything together and let cook another 2-3 minutes. Cover until ready to eat. Enjoy as a side dish or in a bowl like I did.
- Make some cozy bowls if desired: To a single serve bowl, add a big spoonful of the BBQ black eyed peas, some kale salad or cooked veggies and then a couple pieces of cornbread or a spoonful of polenta or grits.
