These Vegan Balsamic Sweet Pepper and Boursin Sandwiches are easy to make and so delicious. They’re great for lunch, but also filling and hearty enough for dinner.
If you enjoyed my 5 Ingredient Trader Joe’s Series, today is your lucky day! These Balsamic Roasted Sweet Pepper and Boursin Sandwiches are made using just five simple ingredients from Trader Joe’s but they taste complex and flavorful.
You can easily make this recipe without shopping at Trader Joe’s; all the ingredients are generic, and TJ’s happens to sell them. You should be able to find them at most grocery stores.
Balsamic Sweet Pepper and Boursin Sandwich Recipe Ingredients and Substitutions
- Mini Sweet Peppers – I love the little bags of mini sweet peppers because they are colorful and great for roasting. If you can’t find the mini ones, thinly slice some red and/or yellow bell peppers.
- Balsamic Vinegar – Use regular, dark balsamic vinegar instead of white balsamic. You can buy it anywhere. I don’t recommend using balsamic glaze for roasting the peppers, but you can roast them in olive oil and then drizzle balsamic glaze over the top after putting them on the sandwich.
- Boursin Cheese – You can use regular or dairy-free Boursin for these sandwiches. I’d never had Boursin cheese before TJ’s started carrying the dairy-free version, and I’ve fallen in love with it! I’m not currently dairy-free, but I love dairy-free Boursin, which I use here.
- Ciabatta Rolls – Ciabatta rolls seemed right for a rustic sandwich like this, but any kind of buns or rolls can be used. I toasted mine in a pan with some avocado oil until lightly browned.
- Arugula – I love the peppery bite of arugula, but if you don’t like it, you could substitute baby spinach, baby kale, or spring mix salad greens.
- Extras – Salt, pepper, olive oil, fresh lemon juice (optional)

- Vitamin Power – Sweet peppers are antioxidant-rich. They contain beta-carotene, and vitamins C and E, helping defend against diseases like heart disease and cancer. Arugula contains vitamins A, C, and K (important for blood and bone health), potassium, phosphorus, calcium, and magnesium.
- Phytochemicals – Phytochemicals are found in plants and are particularly potent in colorful fruits and veggies like sweet peppers and arugula. They help prevent cancer, Alzheimer’s, and diabetes, reduce inflammation, support the heart and immune system, and regulate hormones.
How To Make Five-Ingredient Balsamic Sweet Pepper and Boursin Sandwiches
- Start by pre-heating the oven to 450 degrees F. Wash your peppers and thinly slice each of them, discarding the seeds and stem area. Add the pepper slices to a large baking dish. The balsamic will easily burn on a sheet pan, so it’s best to use a baking dish. Add in the olive oil, balsamic vinegar, salt and pepper. Toss everything together until peppers are coated, and bake in the oven until peppers are softened and browned to your liking. This will take about 25 minutes.
- Slice your ciabatta bread in half, horizontally, and lightly toast in a saucepan with some butter or oil, if desired. Add a couple of handfuls of arugula (enough for however many sandwiches you make) to a medium-sized bowl and drizzle with olive oil, a drizzle of fresh lemon juice or balsamic dressing, and a pinch of salt and pepper. I don’t usually use exact measurements for this, so let me know if you want some!
- Spread a desired amount of Boursin cheese on the bottom slice and top with a big spoonful of the roasted peppers. There should be enough peppers for four sandwiches. Add a big handful of the arugula mix and place the top of the roll on.
- Enjoy this sandwich on its own or with a side of chips, fries, soup, or a salad for a more complete meal.

- Is this recipe gluten-free? I used regular ciabatta bread, but you can easily substitute a gluten-free version.
- Is this recipe vegan? Yes, I used the dairy-free Boursin cheese, but you can use the regular kind if you aren’t making yours vegan.
- How long will leftovers last in the refrigerator? If storing the roasted balsamic peppers, they should last about four days in an airtight container. If storing the pre-made sandwich, it will likely get soggy after a few hours.

- 4 Ciabatta rolls
- 1 (6 oz) container dairy free, or regular, Boursin cheese
- 1 small bag arugula
- Salt and black pepper
- Fresh lemon juice, if desired

Notes
You don’t have to make 4 sandwiches, you can roast the peppers all at once and use them to make sandwiches all week long. They can be heated up or left cool when making your sandwiches with the pre-roasted peppers.
