Peanut Butter Baked Oatmeal Cup Recipe Ingredients
- Plant-Based Milk – You can use any kind of milk you like. I’ve loved the Silk Soy Milk, which has 7 grams of protein per serving. Almond, coconut, oat, or even dairy milk will work.
- Maple Syrup – Use pure maple syrup rather than pancake syrup. You can also use honey, agave syrup, or date syrup.
- Coconut Sugar – You can use coconut, brown, or granulated sugar.
- Peanut Butter – I like to use creamy peanut butter made with just peanuts, no added sugar. You can also use almond butter or sunflower seed butter.
- Old-Fashioned Oats – Oats are nutritious and a great way to start the day. Old-fashioned oats are the best for this recipe, but you can experiment using quick-cooking or steel-cut oats if you like.
- Apples – You can use any kind of apple you like. This is a great recipe if you have some older apples lying around that aren’t quite as crisp as they used to be.
- Flaxseed – Flaxseed adds nutrition and helps to bind all the ingredients together, like an egg. You can replace the flax with an egg if you like.
- Vanilla Extract, Cinnamon, Baking Soda, Salt
Why Your Body Will Love This Recipe
- The Many Benefits of Oatmeal – Oatmeal has many benefits, including making our bodies feel full longer (fiber!), which can lead to weight control. It can lower cholesterol, help reduce the risk of heart disease and diabetes, and promote healthy gut bacteria and intestinal health. The fiber in oats also helps relieve constipation, and beta-glucan, a soluble fiber, can lower cholesterol and blood glucose levels. It’s also a great source of antioxidants and essential vitamins and minerals like manganese, thiamine, zinc, and copper.
How To Make Caramelized Apple and Peanut Butter Oatmeal Cups
- Make the caramelized apples. Peel apples and dice them into small, bite-sized pieces. You can make them whatever size you like, but I prefer to make them pretty small so they can fit well on the top of the oatmeal cups.
- Heat a large pan over medium heat and add butter, apples, cinnamon, and a pinch of salt. Mix together and cook until the butter is completely melted. Next, add the coconut sugar and a splash of water (2-3 teaspoons). Mix everything together until the apples are completely coated with the sugar mixture. Allow to simmer for 5-7 minutes, stirring once or twice, until the sauce has thickened. Turn the heat off and let the apples cool while preparing the oatmeal.
- To a large bowl, add the milk, maple syrup, peanut butter, coconut sugar, flax seed, vanilla extract, cinnamon, salt and baking powder. Whisk everything together until combined and then add the oats. Mix again and then let sit for about 10 minutes, until oats have soaked up some of the liquid.
- Grease a muffin pan well, then use a 1/4 cup scoop to scoop the oatmeal batter into the muffin tin. When added to all 12 spots of the muffin tin, a heaping 1/4 cup should use up all the batter.
- Top each muffin cup with about a tablespoon or so of the caramelized apples, and then drizzle any leftover sauce over each muffin cup. Place oatmeal cups in the oven and bake for 40-45 minutes until firm to the touch and cooked through. Remove from the oven and allow to cool in the muffin pan for about 10 minutes before transferring to a wire rack to cool completely.
