This Apple Cinnamon Baked Oatmeal is perfect for a healthy and delicious breakfast for snack!
Ingredients

- 4 cups old fashioned oats
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup coconut sugar
- 2 1/3 cups almond milk
- 1/4 cup pure maple syrup
- 1/3 cup unsweetened applesauce
- 2 teaspoons vanilla extract
- 1 tablespoon ground flaxseed
- 1 heaping cup diced apples
Instructions
- Pre-heat oven to 375 degrees F. In a large bowl, add the oats, cinnamon, baking powder, salt and coconut sugar. Mix together.
- Next, add the almond milk, maple syrup, apple sauce, vanilla and flaxseed. Mix together and let sit for 3-5 minutes. Add the diced apples and mix again.
- Pour baked oatmeal mixture into a large baking dish, or into a muffin pan, and top with a few more pieces of apples if desired. Spread mixture out so that it’s even and then bake until it’s cooked through, 35-40 minutes. Let cool for 10-15 minutes before eating.
Notes
Baked oatmeal will stay good in the refrigerator for up to 5 days.
