Description

This Apple Cinnamon Baked Oatmeal is perfect for a healthy and delicious breakfast for snack!


Ingredients

Scale
  • 4 cups old fashioned oats
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut sugar
  • 2 1/3 cups almond milk
  • 1/4 cup pure maple syrup
  • 1/3 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 1 tablespoon ground flaxseed
  • 1 heaping cup diced apples

Instructions

  1. Pre-heat oven to 375 degrees F. In a large bowl, add the oats, cinnamon, baking powder, salt and coconut sugar. Mix together.
  2. Next, add the almond milk, maple syrup, apple sauce, vanilla and flaxseed. Mix together and let sit for 3-5 minutes. Add the diced apples and mix again.
  3. Pour baked oatmeal mixture into a large baking dish, or into a muffin pan, and top with a few more pieces of apples if desired. Spread mixture out so that it’s even and then bake until it’s cooked through, 35-40 minutes. Let cool for 10-15 minutes before eating.

Notes

Baked oatmeal will stay good in the refrigerator for up to 5 days.
