This summery One Pot Vegan Caprese Pasta is so easy to make and only takes 30 minutes!
Happy June! It’s the first of the month and it also just happens to be 30 Minute Thursday! Not only do I have a 30 minute dinner recipe for you today, but I also have a one pot meal, which are quickly becoming my new favorites!
While it isn’t officially summer yet, it’s definitely feeling like summer around here so I’ve been eating like it’s summer lately! To me summer food means lots of fresh, juicy produce and quick and easy meals that don’t require an oven.
There’s also a plus if they only require one pot because all this summer heat makes me feel pretty lazy! You would think I’d be used to the hot temperatures by now, but every year around this time I dream of moving somewhere that has four seasons, rather than just perfect weather and way too hot weather 🙂

One-Pot Creamy Vegan Caprese Pasta {30-Minute}
- Total Time: 30 minutes
- Yield: 4-6 1x
Description
A delicious and summery one pot pasta recipe!
Ingredients
- 2 cups water
- 2 cups plain, unsweetened non-dairy milk of your choice
- 4 cups penne pasta
- 1/2 teaspoon salt
- 1/4 cup + 2 tablespoons nutritional yeast
- 1 pint cherry tomatoes, sliced in half
- 2 teaspoons olive oil
- 2 cloves garlic, minced
- 2–3 tablespoons chopped fresh basil
- Salt and pepper, to taste
Instructions
- Add the water and milk to a medium sized pot and bring to a boil. Make sure to keep a close eye on it because milk can boil over quickly. Add the pasta and 1/2 teaspoon salt, stir and reduce to a simmer. Cook until pasta is cooked through and most of the liquid has cooked off, 12-15 minutes, stirring occasionally.
- Once pasta is finished cooking, remove from the heat and add the nutritional yeast, olive oil, cherry tomatoes, garlic and basil. Stir until combined and serve immediately. Season with salt and pepper to taste.

This was delicious , thank you! Added about one extra cup of almond milk and used an entire package of penne. Also used 1/2 C nutritional yeast instead of 1/4 C. Next time will do the same but add an extra clove of garlic and a bit more basil. Can’t wait to make this again!

This was bomb! I used it for meal prep this week and went a little extra and roasted the cherry tomatoes with some asparagus in the oven and sautéed some sweet onion in olive oil before adding the liquid to the pot. Really delicious and easy, thank you!

Where has nutritional yeast been all my life!? 🙂 I have never had it before, but bought some specifically for this recipe and made it last night. It was so easy and my husband and I really enjoyed it and couldn’t get over how creamy it was. Definitely a keeper! I’ve always been sceptical about one pot pasta recipes & had never tried one before. Well I made this today & I’m convinced! Great, easy recipe. Having a glut of courgettes I fried courgettes & mushrooms & used them instead of tomatoes – fab! Thanks for the recipe, I’ll be making this again.

I added an additional 2T of nooch and a generous fistful of basil (there’s never enough basil!) and then proceeded to lick the bowl clean. A+ gold star recipe! I’m not the biggest fan of the texture of fresh tomatoes that have been warmed, so I’ll try sun dried next time 🙂

Love one-pot recipes! My husband, who usually does the dinner dishes, appreciates them too, haha. I’m a huge fan of cherry tomato sauces. If I’m at a loss for what to make for dinner, often I’ll whip up a fresh tomato sauce or just chop up some cherry tomatoes with basil & olive oil to throw in with pasta. So simple & perfect!
