These Greek Salad Sandwiches with Hummus are easy to make and such a refreshing sandwich for the summer! Make them for a work lunch or a fun luncheon party with your friends! You can also make these into wraps or open faced sandwiches, if you want them a little less messy.
Greek Salad Sandwiches with Hummus Recipe Ingredients
- Lettuce -I used romaine lettuce because that is what is traditional in Greek salad and I like that’s it’s crunchy so it stands up well to the dressing. You can use whatever kind of lettuce you want for this recipe though.
- Veggies – You can use whatever Greek inspired vegetables you like. I used tomato, red onion, kalamata olives, roasted red peppers, artichoke hearts, cucumber and fresh herbs and garlic. If you don’t like the taste of raw garlic, you can use about 1/4 – 1/2 teaspoon garlic powder instead.
- Dressing – The dressing is very simple and made using olive oil, red wine vinegar, dried oregano, salt and pepper. You can also use a bottled Greek dressing if you have one on hand.
- Hummus – I just used a plain flavored hummus because I wanted the flavors of the Greek salad to stand out, but you can use whatever flavored hummus you like. Garlic or roasted red pepper would be great!
- Bread – I used a thick sourdough bread but you can use any kind of bread you like. This can be a messy sandwich, so you could also use a large tortilla to make a wrap with or you can wrap your sandwich in parchment paper so nothing falls out of the bottom when eating.
How To Make Greek Salad Sandwiches
- Chop all salad ingredients into small pieces. You want them all to be about the same size. You can cut them a little larger than I did, if you like.
- To a medium sized bowl, add the lettuce, cucumber, tomato, red onion, kalamata olives, artichoke hearts, red bell peppers, fresh herbs, garlic, feta cheese, dried oregano, olive oil and red wine vinegar. Mix everything together and season with salt and pepper, to taste.
- Prepare you bread, or wrap. I just used cold bread but you can warm or toast your bread or wrap if desired. Spread a couple spoonfuls of hummus on the bottom slice of bread and then top with a few spoonfuls of the greek salad. You can pack as much on as you like.
- The sandwich is a little messy, so if you don’t like a messy sandwich, I would recommend wrapping in parchment paper, or using a large tortilla to make a wrap instead of a sandwich.

Ingredients
- 2 cups chopped romaine lettuce
- 1 cup diced tomato
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/2 cup chopped kalamata olives
- 1/2 cup chopped marinated artichoke hearts
- 1/2 cup chopped roasted red pepper
- 4 oz diced or crumbled feta cheese
- 1/4 cup fresh herbs (such as dill, oregano, parsley, mint)
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste (about 1/2 tsp salt and 1/4 tsp pepper)
- 4–6 slices of bread, or sandwich buns
- About 1 cup hummus, homemade or store-bought
