Happy Friday! I hope you all are as excited as I am about these new Quick and Easy, Budget Friendly, Vegetarian Meal Plans! Each Saturday morning I will send out the new meal plan that includes: 5 vegetarian dinner recipes that all take 30 minutes or less to prepare and a printable ingredient list that you can use to help with your shopping list. For each recipe I will also give suggestions on optional side dishes and ways to make the meal even more budget friendly!
Budget Friendly Dinners
Grocery prices are insane right now, so I know I’m not the only one looking for ways to save money when I can. There’s still a few things I won’t cut corners on, but for the most part these days I try to buy the cheapest versions of our grocery staples that I can find.
30 Minute Dinners
Both my boys are in school now, and as much as I love my alone time, I still want to spend lots of time with them. Dinners that take 30 minutes or less to prepare make it so I’m not stuck in the kitchen all evening and I can spend more quality time with my family.

MONDAY
Teriyaki Stir Fry with Broccoli and Chickpeas
Serving Suggestions: This meal can be enjoyed on it’s own or with a side of vegetarian egg rolls, spring rolls or potstickers.
Budget Modifications: This meal is already pretty budget friendly, but if you don’t have all the ingredients for the homemade teriyaki sauce you can buy bottled sauce instead. This will save you from having to buy quite a few ingredients.
TUESDAY
Serving Suggestions: This pasta can be enjoyed all by itself or with a side salad, bread sticks, garlic bread or side of cooked veggies.
Budget Modifications: This recipe is already pretty budget friendly, but if you have extra broccoli from the stir fry you can use broccoli in place of kale.
WEDNESDAY
Serving Suggestions: This polenta enchilada bake goes well with a side salad, chips and salsa or a side of rice and beans.
Budget Modifications: If you don’t already have the spices on hand, you can omit them and just make sure your enchilada sauce is super flavorful. You might also be able to find a container of pre-chopped veggie mix that already contains onions and peppers. The pre-cut veggies can be more expensive, but it might end up being less than buying an entire onion and peppers.
THURSDAY
Sun-Dried Tomato Quesadillas with White Beans and Broccoli
Serving Suggestions: These quesadillas are great served with a side salad, chips, fries or even soup.
Budget Modifications: The only ingredient that may be a little more speedy is the sun-dried tomatoes. I prefer the ones packed in oil but you can also sometimes find the dried ones in a bag that are more budget friendly usually.
FRIDAY
Serving Suggestions: This BBQ Chickpea Pizza can be served on it’s own or with a side salad.
Budget Modifications: There aren’t too many ingredients in this recipe so it is already pretty budget friendly. If you have flour, yeast, sugar, oil and salt at home you can make your own pizza crust rather than buying a pre-made one.
