This Glazed Eggnog Banana Bread is the perfect way to put a holiday twist on your traditional banana bread recipe! It’s really moist, flavorful and great for breakfast, snacks or dessert.
Eggnog and banana bread are two of my favorite things, so it’s about time I made Glazed Eggnog Banana Bread! I was actually planning on making a coffee cake style banana bread recipe, which called for milk. I opened the refrigerator to get the milk and saw the eggnog and immediately decided to change gears!
The recipe worked out perfectly and I’m so excited to share this Eggnog Banana Bread recipe with you today!
Glazed Eggnog Banana Bread Recipe Ingredients
- Bananas – I like to use 4 medium-large sized bananas in my banana bread. It’s also best if they are on the ripe side so they will add more sweetness to the recipe.
- Eggnog – Regular or vegan eggnog can be used for this recipe. I like to use a high quality eggnog that is thick in texture, that will make the banana bread super moist!
- Eggs – I use two large eggs. You can make this banana bread vegan by using a vegan egg substitute, but the texture will be a little on the mushier side.
- Oil – You can use any mild flavored oil in this recipe as long as it is melted and at room temperature. I like to use a vegetable based oil or refined coconut oil.
- Sugar – I used a mixture of brown sugar and granulated sugar. You could also use coconut sugar.
- Flour – I just used regular, all purpose flour. You can also make this recipe using whole wheat flour, or a gluten free all purpose flour. Let me know if you have questions about other types of flours!
- Spices – I usually just use cinnamon when making banana bread, but added some nutmeg this time to emphasize the eggnog flavor. A lot goes a long way but it adds a lot of flavor!
- Eggnog Glaze – The eggnog glaze is just four easy ingredients: powdered sugar, eggnog, cinnamon and nutmeg.
- Vanilla Extract
- Salt, Baking Soda, Baking Powder
How To Make Eggnog Banana Bread
- Pre-heat oven to 350 degrees F. Grease a standard size loaf pan and set aside. Add the bananas to a large mixing bowl and mash with a fork. You want to try to mash all the big lumps out. Next, add in the oil, eggs, brown sugar, granulated sugar, vanilla extract and eggnog. Use a whisk to mix everything together. You can also use an electric mixer if you like.
- Next, add in the flour, spices, salt, baking soda and baking powder. Mix everything together completely and then pour batter into the greased loaf pan. Place in the oven and bake until a toothpick inserted comes out clean, 60-70 minutes. It will depend on how well your oven works. I flipped mine around half way through to make sure the top go an even bake.
- Remove banana bread from the oven and let sit in the loaf pan for about 10-15 minutes. Then, remove bread from the pan and let cool completely on a cooking rack.
- Make the eggnog glaze. Add powdered sugar and spices to a medium sized bowl and mix with a fork. Next, add eggnog into the bowl and whisk together. If you like a thick glaze add less eggnog, and more eggnog for a thiner glaze.
- Wait until the eggnog bread has cooled and then drizzle the glaze on top. I like to completely cover the top and allow some to drip down the sides. Allow glaze to cool completely so that it is hardened. It will harden faster in the refrigerator. Cut eggnog banana bread and enjoy!
