A healthy and filling Mexican inspired dinner using jackfruit!
Have you guys tried jackfruit yet?! This was my first time experimenting with it and I really like it! It’s nice to add something new to the pantry 🙂
If you aren’t familiar with jackfruit, it’s the fruit from a jackfruit tree that is picked while young, before it develops a sweet taste. These days it’s pretty popular and you may have seen it used in a veganized pulled pork sandwich.
Once it’s cooked down a little bit you can shred it and it resembles pulled meat. It’s high in fiber, but has zero protein, so I decided to combine it with some pinto beans to make these taquitos a little more filling. I plan on trying the mock pulled pork sandwich at some point, but decided to put a Mexican spin on it this time.
These taquitos are baked to crispy perfection and the filling is so flavorful! They’re easy to make and also great to freeze for a super easy weeknight meal or snack. You’re more than welcome to add some shredded cheese inside if you like, but the nutritional yeast gives them a nice cheesy flavor as well.
You can buy jackfruit on Amazon and have it shipped to you, or you might be able to find it at the store. I’ve recently started seeing it at Trader Joes. If you’re up for the task you can also buy the actual whole fruit and cut it up yourself!

Description
A healthy and filling Mexican inspired dinner!
Ingredients
- 1 teaspoon olive oil
- 1/2 small onion, any kind you like
- 1 (20 oz) can jackfruit, drained
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 3/4 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/2 teaspoon salt, divided
- 1/4 teaspoon black pepper
- 1/2 cup chunky salsa, divided
- 1/4 + 1 tablespoon water
- 1 (15 oz) can pinto beans, drained and rinsed
- 3 tablespoons Nutritional Yeast
- 12 corn tortillas
Instructions
- Pre-heat oven to 350 degrees F.
- Heat a large skillet over medium heat and add olive oil and onion. Cook onion for 3 minutes and then add the jackfruit, spices, 1/4 teaspoon salt, pepper, 1/4 cup of salsa and water. Stir until combined and let cook until jackfruit is tender, about 10-15 minutes, stirring occasionaly.
- Use a spatula to break apart the jackfruit until it resembles pulled meat. Add the pinto beans, nutritional yeast, remaining 1/4 cup salsa and 1/4 teaspoon salt. Stir until combined and cook for about 5 minutes.
- Place 1/4 cup of the mixture in the center of each tortilla, spread it out into a little log and roll tightly. You may need to heat your tortillas in the microwave or on the stovetop in order for them to roll without breaking.
- Place taquitos on a large baking sheet and bake until browned on each side, about 20 minutes, flipping once.

Hi! I would freeze them just before baking them in an airtight container for 3-6 months. To re-heat just follow the regular cooking directions and then probably add an extra 10-15 minutes to the bake time. I hope that helps 🙂

This was my first time making jackfruit and I felt confused about how the big pieces turned into a shredded texture lol but everything worked out just fine. I put less paprika for my sensitive children and added a 1/2 teaspoon of chili powder to even out the spices. I also added about 1/2 cup of rice to the mixture which increased the number of taquitos made. Everything worked out great! We ate these with salsa and home made guacamole. This was our dinner but I would totally recommend these for a game day snack or anything along those lines!
(side note: since this was my first time making it, I did take longer and I added extra water as needed to make sure it cooked all the way)

We’ve lived on a tropical island the last few years, so I’ve been out of touch with food trends, but our island has tons of jackfruit everywhere! I don’t particularly love the way locals cook it up, but I think I’ll have to give this a try, it looks so yummy!

Is there a way to keep the tortillas from falling apart? I heated them for a few seconds in the microwave, rolled them, but as soon as I set them down, they cracked down both sides!

I Carie, hmmm what kind of tortillas are you using? I used corn tortillas and heated them in the microwave until they were soft and kinda wet and steamy and didn’t have any problems with them cracking. Maybe heat them a little longer? Or you could try heating them in a pan with a little bit of cooking spray or oil oil. I hope that helps!

Okay, so I bought jackfruit from Amazon (not the brand you linked to) and made BBQ jackfruit and it was…meh. But I think it’s the brand I bought which was only sold in packs of 6, lol. Now I have 5 packs of jackfruit and I don’t like it! :/
Anyway, I need to try the brand you linked to and give these taquitos a go because they look fantastic! I love when the corn tortilla gets all crispy from baking…mmm. Sounds so good!

I bought some last year and opened the can and it smelled strange and looked weird so I never ate it haha (I was pregnant and paranoid because I thought it smelled like the can lol). But I tried it again and really liked it! I’ve also bought it at Trader Joe’s and they have some good stuff! I still haven’t tried the BBQ version but I’ll have to soon 🙂

Yes, I want to try jackfruit! My wife is now vegetarian and I know that one of the things she misses is pulled pork. You mentioned it here, but I want to try it in that kind of recipe. And I am sure we will order some on Amazon, but right now our garden is producing so prolifically that we spend most of our meals trying to make use of what we have! First world problems, right?

It’s really fun to cook with! It doesn’t have much of a flavor, but easily takes on other flavors and has a nice texture! That’s awesome your garden is doing so well! I never had much luck with one here in Arizona 🙁
