These 30-Minute Vegetarian French Bread Pizzas with Pesto, Broccoli, and Tomato are perfect for a quick, easy weeknight dinner.
This January, I’m mixing it up a bit and sharing a combo of Meal-Prep Lunch Recipes and 30-Minute Dinner Recipes. Today, I’m so excited to share these 30-Minute Vegetarian French Bread Pizzas with you because they’re so easy and seriously delicious!
We make a lot of bread-based homemade pizzas around here because they’re so easy, and you don’t have to prep the crust. French bread pizzas are my favorite so far because they get nice and crusty on the bottom and taste like a deep-dish pizza.
I wanted to do something special for these 30-Minute Vegetarian French Bread Pizzas. I love piling my pizzas high with toppings, but sometimes fewer ingredients are better. That way, each ingredient can really shine and doesn’t get overpowered.
30-Minute Pesto Pizza Recipe Ingredients
- French bread – You can of course use a vegan option if needed.
- Pesto – I love using pesto as a pizza sauce because it’s so fresh and really easy to make. For these Vegetarian French Bread Pizzas, I used a simple kale pesto recipe, but you could use any flavor of pesto you like. Making a fresh basil pesto with tomatoes in the summertime would be great!I have a great vegan pesto recipe here.
- Cheese – Use a grated cheese of your choice, vegan or regular. Mozzeralla is a great choice.
- Tomatoes – I know it isn’t exactly tomato season right now, but I love the flavor and freshness they give this pizza! I like to use Roma tomatoes because they’re smaller, but you can use any kind you like.
- Broccoli – I added broccoli because I love the flavor combo of pesto, tomatoes, and broccoli. You can steam your broccoli, but I went the really quick and easy route and just used some frozen broccoli florets. I let them thaw before adding them to the pizza.

- Antioxidants – Tomatoes boast antioxidant power. Antioxidants help neutralize harmful free radicals in the blood, and the lycopene in tomatoes may help reduce the risk of chronic diseases, including heart disease and cancer. Tomatoes are also high in vitamin C, which supports our immune systems.
- Vitamins and minerals – Pesto is packed with vitamins A, C, and K, benefitting bone health, immune function, and protection against chronic diseases and blood clotting; it’s also a good source of minerals like calcium, iron, magnesium, and potassium, which can further support various bodily functions. Basil contains essential oils like linalool, eugenol, and citronellol, which fight inflammation and help lower blood pressure.
How To Make This Pesto Pizza Meal-Prep Lunch
- Heat oven to 425 degrees F. Carefully slice the French bread in half, lengthwise, with a serrated knife. Place bread on a large baking sheet, cut side up.
- Spread each slice with about 1/2 cup of pesto. Use more or less depending on how large your loaf of bread is and how much pesto you like. Next, top with grated cheese, tomato slices, and broccoli. If desired, top with a small amount of grated cheese.
- Bake French bread pizzas until crispy and cheese is melted, 10-15 minutes. Slice and serve.
30-Minute Vegetarian French Bread Pizzas with Pesto Recipe Tips
- If you can’t find French bread, use any big, crusty bread loaf or make this pizza on a bagel or English muffin. You can make it gluten-free with gluten-free bread and vegan by using vegan cheese.
- I like to take a shortcut and use frozen broccoli that I’ve thawed rather than steaming my own.
- Ingredient amounts are really up to you. It will depend on how big your loaf of bread is and what you like. I just gave estimates of how much of each ingredient I used on my pizzas.
- You can use any flavor of pesto you like on this pizza. I made a kale pesto myself, but it would also be really tasty with a traditional basil pesto.

Ingredients
- 1 loaf French bread
