It’s the first installment of 30 Minute Thursday for 2016! Ā I wasn’t that great at being consistent with it last year, but I’m going to try to make it a point to participate each month this year. Ā I hope you guys enjoy this series and find it beneficial! Ā Not all recipes are gluten free or vegetarian but most can easily be tweaked for any dietary needs you may have.Ā You’ll find some delicious 30 minute recipes from some of my favorite food blogger friends at the bottom of the post š
As I write this post I’m sitting next to the portable heater with Cheeto curled up on my lap, with a soft blanket of course. Ā It’s pouring rain outside and there isn’t a hint of sun in the sky. Ā My Bob Dylan Pandora is playing loudly and I have a big bowl of this soup in front of me. Ā And let me tell you, it is delicious!
If it weren’t for Cheeto on my lap I would already be planning my trip to the kitchen for seconds. Ā But everyone knows that you can’t disturb a sleeping cat š Ā This soup really is great for those cold winter days where you just want to curl up under a warm blanket and not leave the house the entire day. Ā Another great thing about it is that it only takes 30 minutes from start to finish. Ā Trust me, I timed myself while making it! Ā I have to admit that it was a little stressful but I wanted to make absolutely sure that it only took 30 minutes to make. Ā It’s also packed with peppers and onions and topped off with a fresh pico de gallo for a perfect kick of vegetables!

Print30 Minute Black Bean Soup with Pico De Gallo
- Total Time: 30 minutes
- Yield: 6-8 1x
Ingredients
- 1/2 small red onion
- 1 small green pepper
- 1 small red pepper
- 1 teaspoon olive oil
- 1 teaspoon salt, divided
- 4 (15 ounce) cans black beans – DO NOT DRAIN!
- 2 1/2 teaspoons ground cumin
- 2 teaspoons paprika
- 3/4 teaspoon granulated garlic
Pico De Gallo:
- 2 large tomatoes, chopped
- 1/3 cup chopped red onion
- Chopped jalapeno, to taste
- 1 small handful cilantro, chopped
- 1 clove garlic, minced
- Juice of 1 lime
- 1/2 teaspoon salt
Instructions
- Heat a large pot over medium heat and add 1 teaspoon olive oil. Dice the onion and peppers and add to the pot with 1/2 teaspoon salt. Cook vegetables until tender, about ten minutes, stirring occasionally.
- Make the pico de gallo while the vegetables are cooking. Add all pico de gallo ingredients to a medium sized bowl and stir until combined. Set aside until ready to use.
- Once vegetables are cooked you can add the 4 cans of beans to the pot. Add the beans as well as all the liquid in the cans. If you would like a thicker soup, you can drain the liquid from one of the cans. Next add the cumin, paprika, garlic and 1/2 teaspoon salt. Stir until everything is combined. Use an immersion blender to blend the soup until pureed or transfer soup in batches to a food processor or blender.
- Transfer pureed soup back to the pot and heat over medium heat to desired temperature. Top each serving with pico de gallo.

Sounds simple enough with LOTS of flavor! I love a simple pico de gallo for dipping chips or topping tacos, but I’ve never used it in soup. That would add great texture. Mmm mmm!
