Wow Just found this site! So so happy! I am not truly vegan YET, I am dairy free vegetarian at this point. but that means that most vegan recipes are best for my needs! (I make that statement not because I eat meat but because I still use regular pasta etc.) hope this doesn’t offend anyone) I love your twists and takes on these comfort foods that I really like. I am picky, sorry! But I am. I hate tofu, and tempeh is not my fave yet, I cannot say that I won’t come around to it. but so far not there. but I am trying. I don’t like what meat does to me anymore, the less of it I ate the less I wanted any. Yuck! anyway. I am going to try quite a few of your recipes and see how they are for me. I am pretty sure I will like them. really looking forward to the polenta dish. Don’t dislike it but wanted to find a recipe that could really suit me and my taste and I think you have done it. Thank you again for sharing your beloved recipes!

I just commented on another post but now I’m browsing your site. 😉 I’m so glad to have found it. It can be hard to find veggie food bloggers who aren’t too heavy on cream and cheese. I’ve been following Cookie & Kate for years and while I LOVE her (and every recipe of hers I’ve ever made – which is a lot), I’ve been looking to diversify with other veggie/vegan blogs. Excited to have found you!

Hi Izzy,
When I try browning the gnocchi before using it in the Enchilada skillet, it falls apart and sticks to the pan. I’m not sure what I’m doing wrong. Any tips?

Hi Kate, Hmm, I’ve found that the gnocchi tends to suck up a lot of oil so sometimes I have to add more. You could also try boiling the gnocchi for a few minutes first so they get a little soft before you brown them up. I hope that helps 🙂
